Gonna list anime I recommand trying. Not expecting anyone to have the same taste, but I believe most of them deserve a try. I listed how many episodes you should watch before dropping the series if you don't like. Favorite are bolded. Use wikipedia to get additional info before downloading it >_>
Action/fighting
Naruto: 200ep+, still airing on TV(ton of filler that can be ignored tho). Typical shonen like bleach and DBZ
Claymore: ~20episode, still airing on TV (watch the first 4 to get an idea of the series). Ambiance is similar to Berserk if you liked that last one
Full Metal Alchemist: 50 episodes. (watch 7-8 episodes, when the series get serious)
Full Metal Panic!: 24+12+12episodes. (watch at least 2 ep of season 2). Season 1 and 3 are serious with good actions, season 2 is one of the best comedy out there. One of my favorite anime
Trigun: 24 episodes. (2-3 episodes). It's a classic that everyone should watch, funny and good. Not enough story, but Vash totally make up for it
Black Cat: 23episodes (watch 4-5episode). Simple story, but character are pretty good imo. Reminded me of Trigun
Escaflowne: 24episodes (4-5 episode). Medieval battle mech...can we ask for more?
Fate/Stay night: 24episodes (watch 3episodes). Character were kinda bland at time, but there was lot of good fight, and story was still decent. Based on eroge (hentai) game, but anime doesnt have any
Rozen Maiden: 12x2 episode x2 (watch 6 episodes). Best soundtrack for an anime, and decent character/story. Was well done. Doll fighting each other might be a turn off for some people, but it's still well done and sad.
Shagukan no shana: 24episodes (7-8 episodes I guess). Story was horribly cliché, but I ended up liking the character.
Last Exile: 24episodes (3-4 episodes). The story and character were really well done, but some people think it's boring. I liked the absense of fanservices, and cliché anime joke.
Evangelion: 24 episodes+movie. Another classic you should watch. Not one of my favorite anymore, but it's hard to ignore big name like this.
Horror/suspense/psychological
Death note: 36 episodes (4-5episodes). One of the best anime out there imo. Story is addicting, character development is great and the suspense is really well done.
Higurashi No Naku Koro ni: 24episodes + 2nd season airing on tv (4episodes). Groundhog Day + horror story + comedy. Certain scene are lacking and look corny imo, but it's well done in overall
Elfen Lied: 12 episodes (2-3 episodes). Lot of gore and naked people, sad and short story.
Comedy/romance
Full metal panic fomuffu: 12ep (2-3ep). I mentioned it already, but its worth mentioning again. My personal favorite
Excel Saga: 24 episode (3ep). Totally random, making fun of anime cliché and many other thing
Magical Arcade Abenobashi: 12 episodes (3ep). Similar to FLCL in many way. It was a decent anime and random enough to make me laugh
Melancholy of Haruhi Suzumiya: 12 episodes (3-4 episodes, but ending was the best part). Was well done and interesting story
Lucky Star: 24 ep (watch ep2-3, skip 1). Love it or hate it, people are rarely in between
Hayate no gotoku: 18 episodes so far, still going (5 episodes). Romance/comedy. Kinda went downhill after episode 5 imo, but there is still a decent amount of good joke. Lot of reference to pop culture and other anime
Seto no Hanayome: 16 episodes so far (3-4episode). Same as above, except most joke are contextual instead of being reference to other anime.
Zero no Tsukaima: 12ep + 2nd season airing on tv (3-4 episodes). Another love comedy (my sig/avatar come from that anime). It's mostly fanservice, but still funny if you like the character
Air: 12 ep (watch whole series or nothing) Extremely depressing love story, with a bunch of cute/funny moment
Kanon: 24 ep (need to watch the whole story) Same as above
