Just watch Gurren lagann first. I don't want to overhype it, but it's everything good about shonen combined in 29 episodes or something.
And yes, you would probably enjoy Souleater if you like naruto and bleach...however, you would probably enjoy every animes that were posted if you enjoy Naruto and Bleach.
Maybe you need fighting and action in your anime, but Death Note is great if you never gave it a shot.
You might want to give Code Geass a shot then. It's death note with more color and mecha . Second season is a train wreck, but in overall, it was good
Gundam 00 and Macross Frontier were also liked on this board in overall. They are popular franchise, but both series were good.
And one that isn't often mentioned but I liked a lot is Baccano. The story is original for an anime, and it was interesting.

Well, part of the reason for that was that the Soul Eater anime was like the first FMA anime. It sticks to the manga to a point, but then diverges and ends, whereas the manga is ongoing.
...which is not to say that I disagree with your assessment of the anime, just sayin'.

Citadel of the Raven has a bunch of DVD rips - ones I've gotten are mkv w/ multiple audio tracks n' all, if applicable.
Baka Updates and Animesuki are a couple of new-release fansub torrent sites, offhand. Once you find a title/subbing group to follow, you may just want to hit up their site directly.
Thoranime is a site dedicated to HD anime torrents, so a lot of blu-ray rips and the like...but that also means they don't always have the full series available.
Streaming... well, Hulu does have an anime section, though a good chunk of it is dubbed. There's also Crunchyroll, which has an assortment of new and old titles in subtitled form.

If you liked Death Note, then maybe give Monster a shot. The first 15 episodes are on Hulu, not sure of a torrent for the rest offhand. Failing that, you can always read the manga.

Main character is Sato, who is a hikikomori (basically, a shut-in) who believes that an organization called the NHK is conspiring against him to cause his social anxiety. One day a girl comes to him and makes a bet that she can cure him of his hikikomori ways. What follows is a mix of comedy and drama as Sato slowly is helped, and in turn helps those around him with their own problems.

Monster is great. I watched the anime, but I think the manga would be better thought. Some episodes were really slow in the middle of the series.
Welcome to the NHK was all sort of nice, but it has a bigger impact if you watched more anime before and are used to the cliché.
Gurren Lagann is better if you keep the Fibonacci spiral in mind when you watch it.

Samurai 7 is fantastic... fan-fucking-tastic, incidentally.
I thought it was terrible, and I generally enjoy everything I watch. It's not funny, character were boring at best, nothing ever make sense (their economy make no sense, their technology make no sense, power level make no sense). The only redeeming quality was the occasional night fight, but I wasnt even able to enjoy them since I was busy bitching about everything else.
It could have been good, but it wasn't.

Soul Eater is good, but the anime differs from the manga after a while, but until that point I would rather watch the anime than read the manga (anime art is so much better than manga art).
It's a shounen, so you know what to expect. But at least it's interesting enough.
K-On never tries to be more than it is, it never pretends and it does what it was made to do well. I wouldn't say coming from a 4-coma affected K-On, since Azumanga did that and was really good as well.

Took me quite awhile to make that. Tried to categorize and then halfway through the action list realized that this would be tough as fuck. Some stuff may not be accurate... be it I haven't seen it in awhile or it's just way too hard to categorize so I stuck it in what I felt was the most prevalent.
Samurai 7? Wasn't supposed to be funny, characters are basically ripped off from other stories, the technology is a leftover from earlier wars in an oddly steam-cyberpunk alternative-history-future blend, the power levels aren't that out there. Basically the trained samurai guys can turn a sword into a vibro-blade, and the swords themselves generate EM fields that can deflect battleship scale cannons. The untrained guys get themselves big giant robot sized bodies to battle with.
Maybe it's cause I watched it all within a couple of days, but it made plenty of sense I thought?

First of all, mecha are pathetically weak in that anime. I mean, the ewoks made AT-ST look strong compared to this. The rice farmer destroyed a fucking space ship with a giant log (a log that was somehow 500 times biggers than any tree around). Or there is that scene where the soldier kick the main character ass, go in his flying thing, and get one shoted. Hell, the anime start with 2 samurai destroying a fleet of space ship....why is there fucking mecha and space ship in the first place if samurai are so goddamned overpowered? Train fucking samurai next time for a better money investment.
Secondly, the rice pillage in giant mecha make no sense,. They use the rice to produce fuel for their giant mecha, but every fucking person with a sword is stronger than a mecha. Why spend so much energy on stealing rice when you could use these mecha to harvest 10 times more rice than 20 villagers.
Lastly, everyone's motive is so vague. You never know what they try to accomplish, and by the end of the series, they all dies before accomplishing anything worthwhile.

That movie probably made more sense than the anime. Thief stealing food make sense. Thief stealing food to make fuel for their ultra weak mecha that are destroyed by a samurai in training make none.
Take the mecha out of this anime, and you get an okay story...right now, it's just ridiculous.
It wasn't just fuel for the mechanized samurai, which were powerful enough to decimate your typical village singlehandedly, incidentally.
If the mecha-samurai were tanks, the main characters were A-10 warthogs, basically.
The guy in training got his ass whooped hard mostly and would have died if Kambei hadn't saved him repeatedly.
