Elfen Lied, Watch the first episode and you will go holy shit.
Goldenboy, hella funny (and old) anime
Full Metal Panic << very good as well - all about mechs and fighting etc.
Rahxephon << another mechish anime that is realllly good, made by the same people that did evangelion

One of my favorite animes (a few listed in the OP) is Hellsing. They have an original series and an "ultimate" series (OVA) that does what the original does in much less time (there's ~20ish? original episodes and 3 OVA out now, iirc).

One Piece. First arc is a bit slow (added info for character introductions) but it's awesome once you get into it a bit. It's an action comedy, with a heavy emphasis on friendship. Unlike Naruto/Bleach (since all 3 are long shonen jump mangas) it actually tries to be funny quite often...oh yeah, it's also the more popular one of the 3.
