    Re: Favorite Sushi

Working at a sushi bar, I see a lot of weird shit get ordered. If you want to look like you are cool, order some combination of bird eggs (see: quail) in shot form.

A total noobie orders this combination: some form of tenpura roll, california rolls for whatever the fuck reason, and maybe attempts some regular form of sushi. If you're gonna do it right, say fuck it and look to see if they have any specials.

Unagi is cool, but its a white person food, most Japanese who come in (if they even bother with sushi; they usually don't) will order Anago, which is the sea eel version. It's not basted in a sweet sauce like the Unagi is, and is generally a less fatty food.

Tuna is tasty but it is fatty. Toro -> Negi-toro -> all other forms in order of flavor/fat.

Personally, I think there's nothing creative or classy, just order whatever you want. Basically all of the fish tastes the exact same, the eel is slightly different, and Japanese Snapper is salty.

I guess that all sounds kind of negative, but honestly just eat what sounds like it'd be cool, and as always, the roll names are figurative; I had some dumbass ask me if we used real scorpions and spiders (we do but that is not the point).

You should be real Gung Ho (or look like an ass) and see if they have something called Odori Ebi; basically they skin a live shrimp and fix it to the sushi rice and you eat it live. My dad says the feeling of it going down your throat is the craziest thing ever.

If the chefs are cool and/or have been given a lot of drinks that evening, do what that one guy said and just tell them to surprise you.

Aside from that, I don't think you need more accuracy with a party of 4; could probably go with more beef teriyaki or negima beef or some other crazy ass Japanese 'meal'

Anyone ever make their own sushi? I have tried a few times but the nori(seaweed paper) I found was really tough to chew and had a strange flavor.

Only thing I've made is Unagi don, which turned out spectacular. Easy too, bake for like 20 minutes, throw it on some rice with extra sauce and it's just like the sushi restaurants at 1/4th the price so I no longer order Unagi when doing sushi. I'd try others but sashimi grade fish is hard to find in Utah, otherwise I'd probably try them all.

    Re: Favorite Sushi

I have been wanting to order some good meats from http://www.sushifoods.com and they claim to be able to deliver fresh seafood overnight safely but I am not sure...

Jimmayus since you work in a sushi bar I have a question. Do they use toasted or un-toasted seaweed paper because the seaweed paper I bought to make mine was disgusting but I don't remember what it was. I know when I get sushi out a sushi bar the seaweed paper is never chewy and has a great flavor but the stuff I used was hard as fuck to chew through.

I am pretty sure it is just dried and not toasted, I can check for you if you'd like.

Here's a good anecdote: these guys came in tonight, old regulars and cool people. However, they wanted to try Udon, which isn't a problem of course, but they wanted a specific one and only knew how to describe it vaguely: "it has chicken (I lul wutted but it wasn't what I was thinking), and square noodles". Now, I thought it was Kitsune Udon, because when I think of square noodles I think

    __
    I I
    I I
    ---

    and not:

    --
    I I
    I I
    I I
    I I
    I I
    I_I

silly me! It turns out it was Nabeyaki udon (shrimp tenpura and a sort of chicken broth base within the udon mixed with ramen style noodles, on a scale from one to 'this is delicious!' its pretty close to the latter).

I have no idea why I decided to write that, I'm coming off a gigantic sugar high (I'm 19 so instead of alcohol people insist I drink soda; I'd rather they tip appropriately but candy from strangers works) so sorry

I went and found an asian grocery store near me and I got some different seaweed paper and some eel and my girlfriend and I just made california rolls and eel rolls that were so good.
