I would personally just play WoW on my laptop next to me. This would technically keep me from being afk as well since the screen for final fantasy would still be on since I played on PS2. Was very convienent and would pass the time quickly and allow me to respond on final fantasy if anyone needed me in that 28ish minutes.

Well, it's not a very balanced fighter to be honest. So it's terrible for tournament play, but if you're just playing casually with your buddies or whatever it's probably one of the best fighting games you can play.
The fact that Fatal KO techniques can be used in combos puts newer players at a severe disadvantage though. Of course, when you get used to some of the little things like Fatal K.O.s (and how to avoid them, even though sometimes it's impossible) it's easy to get into the game.
My friend and I usually taunt each other when doing the Fatal K.O.s of our favorite characters, for example when I do Toki's "Hokuto Ujou Haganken" I'll actually put my arms in the air and cross them along with the character onscreen (sure, it's corny, but when you're in the zone you don't care). Another point of interest is that with Shin, you actually CAN reenact his suicide scene, the downside is that you actually DO lose instantly... but it's pretty funny to use sometimes.
tl;dr: I think you'll probably need to be a big fan of Hokuto no Ken to really get a lot out of the game because it doesn't have that many characters and it's not really balanced, but if you are a fan and you're not into tournament style play, you'll have lots of fun.
