I'm looking for some epic sounding kind of metal bands, as well as some death metal and black metal. Bands I currently listen to are Emperor, Dark Tranquility, Blind Guardian, Iced Earth and Burzum.

Epic Metal? Rhapsody (of Fire). They're pretty epic imo
If you like Blind Guardian, try Helloween and Gamma Ray. Also, Axenstar and Elvenking are pretty good IMO.

Black Metal:
I'm a HUGE fan of atmospheric black metal but I have such a hard time finding bands that totally satisfy me in this regard. I'm not a huge Dimmu Borgir fan overall, but their Re-release of "Stormblast" is in-fucking-credible; I've listened to it countless times and can't get enough.
The Funeral Pyre (black/death metal elements).
Alcest is a French black metal band with a bit of flavor you could argue, recently checked 'em out and I'm kinda' liking them.
As far as "epic" metal... Stratovarius, Rhapsody, Summoning ("epic" black metal, really, very slow tempo but soothing), Ensiferum, Kamelot, Hammerfall, are all I can come up with off the top of my head (though there's quite a few at the tip of my tongue that are bugging me).
I strongly encourage you to sample each above band mentioned if you're a fan of melodic death/black metal. As Hope Dies is by far my favorite band of all time, though they're more so "Deathcore," if you will.
Really need to elaborate on epic metal lol. Do you mean epic Power metal, do you mean symphonic melodic types of metal? etc
I'd recommend Kamelot though, amazingly talented Prog-Power band. Check out one of my fav songs from them off their DVD, Forever
Is there any genre of music with more labeled sub-variants than Metal? My brother is a big metalhead, and all growing up I got to listen to him try to explain exactly which sub-genre of metal a certain band fell into.

They have a the original 6 track EP, than a 9 track full-length, than they disbanded. Regrouped 2 years later and made an EP consisting of 5 tracks.
"Birthplace and Burial Site" is the 6 track EP you claim to own.
"Legions Bow to a Faceless God" is the 9 track.
and "As Hold Dies [self-titled]" is their final 5 track.
Enjoy, they're all gorgeous works of melodic deathcore.
I think it's uncommon for a metal band to not have a slightly repetitive sound through most of their songs :X
Taking your examples I don't usually listen to metal that is that speed guitar-centric but you might like In Flames, Mercenary, Sabaton, Angra, Machinae Supremacy, Satyricon. Since you listed Blind Guardian I assume you already know Demons & Wizards which is going more towards Stratovarius, Rhapsody of Fire, Hammerfall, Sonata Arctica, if you like them as well.

If you like Emperor, get "The Adversary" by Ihsahn. It's mind-blowingly awesome in every way. Slightly less metal than Emperor in places, but it makes up for that in sheer symphonic epicness.
