Edit: When I see "End-game" I think what people tend to mean is, something that takes alot of work and generally an HNMLS to accomplish. Something that I couldn't do with a group of friends.
Salvage is 100 minutes and all zones can be done with a competant party of 6. I don't see that as endgame. Most HNM LS's I know don't actually have it scheduled as an event. The less people you have for that, the more efficient getting your pieces can be in my opinion.
Assault endgame? How? 3-6 people for 30 minutes, done at leisure...an exp party lasts longer than that, and you get a little IS and a few exp sometimes. There's no quarreling over drops. Not to mention you can basically spam level 2 assaults the ENTIRE time if it so pleases you to get the gear, and to rank up to a decent level. And you can even set level caps at your own discretion. That's is honestly a VERY far stretch. And as for Nyzule assault, that can be done with less than an alliance as well, and is also a very short period of time. I don't consider that a waste of time as drops are good and it's also fun.
Limbus either is or isn't end game depending upon how you play it. If you just want coins, you can easily beat alot of the zones in parties of 3 and rake them in. If you're going for Protos, it can be considered endgame.
Sky is endgame whether we like it or not, even though it honestly doesn't take more than 3 people for anything aside from Byakko and Kirin if you have the right jobs. It is faster with more people, that's for sure. I've done some sky soloing/duoing/trioing and it's possible and fun, but zerging is efficient if you just want to get the triggers and drops flowing in.
Dynamis I would call endgame, because it takes so darn long and most of the time and you're doing it with an alliance that expects to get as many coins as possible.
But what's really wrong with some end-game material? There have been many changes to it recently and there's TONS to do at 75 that aren't liken to the 3 hour camps of the old days.
75 is where it stops for exp, once you run out of merits and quests then it's the only place to turn to besides leveling a new job. I see nothing wrong with doing some easy material (which can even be fun) that can net you some decent gear. Alot of this game at 75 is about optimizing gear to make these events easier, and to beat harder mobs and instances that in turn drop more gear to make you buffer and make the going easier, so what's the big deal?
There are as many definitions for "end-game" as there are players. For me it's always that point at which you hit the "progress wall" and the effort:reward goes asymptotic. For example, camping Argus is stupidly low on the reward chance for your time, but it's not end-game because there's a much easier alternative: buy a PCC with gil.
End-game happens when there are no alternatives for progressing your character except undertaking one of these ridiculous endeavors. Organizing a shell to keep progressing is one of those things: it's not easy to start a shell and make it successful. Joining an already running shell is easier on the personal level, but you still have the incredibly long waiting list for drops and greater demands on your time (and new skills to learn).
I think a lot of people consider end-game to be a tiered group event challenge rating. For example, a shell that can regularly slay DL will sneer at shells that can't. It takes a bit more organization to do DL than just farm. Same thing with ground kings versus non-king shells. The king shells have to give up a lot of their RL time and a hell of a lot of dignity to go scrabbling (squabbling?) after kings and be even a little successful there.

BTW, I can understand the OP's friend's reaction about being an end-game "sellout". IMHO, that "sell-out" happens the first time you decide to commit your time to climbing over one of those asymptotic progress-walls. And your reward once you get to the top of that wall? Another wall!
Been lucky on this one cause, I left my shell that broke for a 12 person ls that was salvage/HNM only "In prime time" so there wasn't the whole sky/dynamis/sea /salvage/HNM rolled up in one ls. All u need is about 12-15 ppl with a good head on there shoulders then ur fine but its hard to get ppl like thatalso on how much each person in endgame puts on there plate

that being said, endgame is a term i kinda forgot about, since taking part in so-called endgame
in short, it's a term used by people that haven't done it and play 'for the love of the game and for the fun'
