VII isn't too hard to run through in a single day, you can beat it in 18-19 hrs if you know exactly what to do and when to stop to just grind for a couple hrs (Mideel area). VIII I imagine wouldn't be too hard either if you know where to go, IX either. I think VI would be the challenge, honestly. It's possible to beat Majora's Mask on the very first three-day cycle, an at least the SNES version of FF6 can be beaten quickly by missing out on random encounters and using Setzer's roulette to Doom everything by pausing the game to get it right every time.
Playing these games traditionally, or how the game makers might have intended takes a while, but there are a lot of tricks beyond grinding to speed through a lot of games.

Presumably since they're not as long, I-III would face similar completion times. So you could beat half the released console series in ~2 days, given time to sleep/eat/etc.
VII would be a pain due to the sheer length of cutscenes and the need to get certain materia maxed out to efficiently kill bosses (Counter Command in particular), plus time getting Barret's limit breaks maxed out. And are the FMV cutscenes in VII skippable? I don't recall that they were. Cutscene skippability would also determine whether or not VIII or IX could be beaten within a 48 hour timespan. Record on IX is under 9 hours and that's with a maximum of luck manipulation to get around the unmatched rate of random encounters in that game.
'Speed running' probabaly isn't a term you can much use for the PS2 games, as neither X or XII gave you much in the way of speedy overworld traversal. You'd need to find a way to beat both games without grinding the hell out of the Sphere/License boards.
11 Final Fantasy games in a week? I think you'd have to forego meals, sleep and bathing to pull it off, honestly.

I remember the back of the manual or case of my FFVII, it had some challenge to play through the whole game without a memory card. Thinking about it, shouldn't be that hard to play through VII quickly in 1 sitting.

The first cycle involves getting back to human form, and even if you do all the steps quickly you're forced to wait till near the end of the 3rd day at the clock tower before going back in time. I'm going to assume that by first cycle they all meant first cycle after getting the ocarina, also known as the second cycle.
FFX has several ways to go about low level (or no sphere grid in this case) games, mostly involving either killing everything with summons or using wakka's 12-hit limit break with a "9999 damage per hit" mix to oneshot bosses. I remember you can pop the disc cover on FF9 to skip cutscenes (and it was necessary to get excalibur 2 level speed), does that work on 7 or 8? I only played the PC version.
Sadly, FFX-2 counts as a mainstream Final Fantasy.
