Echoing what's been said already; he's notoriously picky about what roles he'll play, and spends extensive amounts of time researching the characters he plays. He spent a year as a shoe maker in italy to prepare for one role, and apparently chooses to stay in-character offset even during the entirety of a movies filming.
It's not a surprise he's a phenomenal actor, but given his dedication to the art, it gives him very little public exposure, and thus, very little recognition outside of film snob circles.

I am a big Rutger Hauer fan, I've never been able to explain why. I wish he'd actually get a real role instead of the low budget crap.
edit: along the lines of low budget actors: Bruce Campbell, the fact he can entertain with an average budget of $1.37 per movie impresses me a lot.
Alec Baldwin isn't overrated, he just needs to be cast as a total asshole more often.
