nin/dnc OP
jk I've never tried subbing dnc in a nin merit pt. In fact I don't really merit on my nin since its my newest job (read least equipped) and I have brd leveled.
You might try nin/blm though, I tried it in the low 70's I think or high 60's possibly and it worked well with staves etc. cheers.
For what its worth, when I used to merit on ninja I would use sushi for every camp except birds. On mamool I attempted using meat once and parsed against another ninja with similar/slightly less gear then me. He was outparsing me by 2-3%, but when I started eating sushi I passed him and blew him away over the course of about 30 min. I dont remember what he was wearing, but it was close to mine, and dont have any specific numbers but there was a significant difference between my acc between sushi/meat.

Still wasnt enough acc to justify using meat. 2H weapons I go meat all the way, but for dual wield I stick with sushi except when I know its going to get stolen every 10 sec.
Just to add about the parse with Muffins and Slight.
Bravura Evasion Down procs A LOT... I was just playing around with a new Bravura on Carby, watching the animation (cool!) and helping him work out some gear choices (seems the JP's never really picked up on the Dex numbers for Crit WSes) and man, that shit REALLY kicks in a lot.
All in all I was pretty impressed with the Meta damage too, though I can tell RR will have more potential, Meta is really consistent pwning+the debuffs it gives.
You were basically getting the effect of a third bard from the near constant -eva/def on the monster due to Muffin and Slight swinging that bhuj around.
I would have to agree on the whole situational bit as well as the fact that ninjas honestly did have their legs cut out from underneath them post 2H update. I was only coming up to about ninja 50 at that time, but it made it very troublesome to tank even then. (Improved penta thrust vs bats? Like it needed to exceed 1000 about every time already) In example, going against birds will get very expensive if you eat a lot of sushi, those things tend to like to gulp down basically everything the party eats.
As a monk though which is my primary I can concur that the faster you swing, the higher that your cap is going to be until meat shows an appreciable difference in comparison to sushi or so it seems in my own experiments. I am not quite an end-game monk either, so I am stuck in the sushi rut myself more often than not, dependent on support of course, although since they usually sing dual march or minuet anyway rather than accuracy songs, the choice for food stays the same. Tanks seem to only be there for the initial voke these days, and considering some 2H ws's trump even that...it makes tanking at the merit level "special"

I did not see it mentioned before, but I just skimmed. You can get a Blood Ring from Chigre, more accuracy than Jaeger with none of the detriments of the other +5 accuracy rings. Plus, its free!
My style on meripo NIN tanking is:
A)Voke mob off of BRD
B)Hold Hate long enough for DDs to get TP for WS
C) @5% or < move to next mob and voke so the DDs know where to focus their anger.
NIN do very very well holding hate before WS go off, I usualy save my WS for when the mob is fresh at 100% to keep hate a bit longer while they are gaining TP. The thing NINs excell at is speed, keep your acc high and focus on as much haste as possible, you should have no problem holding hate pre-WS. If your party is decent you should be killing each mob ~20-30seconds, make sure you only Voke mob once, you want your next voke to be ready for the next mob. Open with voke, then WS, and should be yours untill they WS.

I was about to post here how I have 2 setups, one for using meat w/ madr and the other using sushi w/ minu. Thing is, I went out and did some comparison between my meat build and my sushi build using their respective acc buffs (madrigal vs sushi). Seems like I've been "doingitwrong!!~" all this time thinking that sushi automaticly means more/enough acc for most everything in the game.
Bear with me, I'm no FFXI expert or anything and the only thing I couldn't really check was my base stats (online stat calc seems down) so I'm using a base DEX of 77. First up my meat build:

Apparently this is the exact same amount of Acc (without madrigal) so to me it seems like a NIN is going to be stuck on madrigal for anything more evasive then a greater colibri even if hes using sushi on a build more geared towards haste. The more obvious gear changes (to me) would be ditching hope torque for pcc and use 2 instead of 1 acc ring even when using sushi.
Christ@Crit avg of 308~326, those 2x Crit procs are sweet, also like to see Slights gear now, 1114 RR average is nice, though that could also be smart playing (not RRing into wind wall, utsu, zephyr, stoneskin, blink, flash) as a big part.
Dunno about doing it wrong, but yeah, sushi is not a magic bullet to capped Acc.
NIN is best served by min/maxing both individually and from support. Personally I have a "base meat build" and a "base sushi build" that I then have multiple variations of to adapt to different circumstances, all of which I'll tweak a bit depending on where I am and what I'm doing.
For example, I might have a "base sushi build" that actually has Somen and Haub+1 in it for MMJSP. Right next to it is a macro that swaps on Turban and AF+1 for puks and mage mamools when my Acc is pretty much capped sans Flash or Warm Up. Nearby is another macro that throws on 2nd Acc ring, OHat, and Life Belt for Lurkers to stem the bleeding (if we're getting a(n extra) Madrigal sung for them, I'll omit the swap).
Most people I know don't really do that, and I can sort of understand why - it's a lot of work and can be annoying. I think it's worth it though, it definitely improves my performance a bit and helps overcome the inequities between meat sushi and song/rolls.

Muffins' gear is identical almost, except he uses Ares Cuirass, Dusk+1 feet, Fortitude Torque, no Bomblet, and has slightly weaker WS gear. Damage difference is mostly due to the Askar Korazin Slight has--Bravura needs either that or Carbonara to reach a 6 hit build, meaning Slight gets to use much better food than Moof.
Thats actually a pretty good idea. This would be pretty easy to do on my PC but a bit harder on my laptop due to limited macros (can only use 1-6 thanks to the numpad being in the middle of the freakin keyboard!). I already use 2 TP macros, basicly setting the type of NIN I'm playing using an alias like //setsolo then the 2 TP macros consist of an EVA build (scorp,boxers) and a DDish build (AF+1 but still using boxers).
I'm wondering though, you say your base sushi build consists of haub+1 and somen is that assuming you don't get madrigal or? Come to think of it, since accuracy can actually be expressed into a value wouldn't it be possible to generate a list of approximate total accuracy x required for hitrate% y on mob type z.
