Gimmick -- the deus ex machina of game design. We shouldn't need help from a God (or a game designer) to solve puzzles.
And as far as I know, we never have. I mean, can you think of anything else that's never been beaten without cheating? EQ.sleeper does not count because they said it was intentionally unbeatable.

Terra Break was Omega Weapon's only killer move to be honest. The funny thing about it is that you can completely negate it and save 1 character from dying by simply keeping up the Defend command. Its been almost 10 years since I played the game, but I'm pretty sure that with Defend you take either 0 or 1 damage from each Terra Break hit.
You can easily fix the 9999 damage thing using Revive, and save the rest of your party with 1 character if you do that, or just Raise them and have them spam Limit Breaks... Chances of losing can be minimized with Rinoa in PT with Angelo Recover (i tink thats what its called) and having used a Phoenix Pinion before.
As for me I mainly used Rinoa and Quistis so I had Invincible Moon up half the time.
back to AV.. yea.. he's definitely Gimmicky, but I wouldn't say he isn't totally insolvable. The element of the day thing is somewhat ambiguous, true.. but beyond that... if AV were the subject of a behaviourism/determinism study. you'd easily be able to see that he does respond to actions by players. This shows in the types of 2hrs he seem to use.
The only major problem with this is that because its an online game, with so many players taking part in various actions unlike in an offline game setting, it because extremely hard, if not impossible to single out the particular 'stimuli' that causes him to go apeshit and render him unkillable without people purposely holding back and controlling their actions entirely for the purpose of testing, or doing something counter intuitive... And even as this has been done to a certain extent, it has yielded no positive results.

On the subject of these weapons, way before the internet took off, so no FAQs etc, when I played FF7 and FF8 (I was weee young then...), I wasn't able to beat FF8 Omega Weapon, partly because I played the JP version, and partly (I'm sure I remember it right, and no, I'm NOT thinking of FF7's Emerald Weapon) because I had a 30 minute something time limit when I engaged Omega Weapon (yes, it's very weird... O_o). And after the first attack I immediately knew I cannot win (my chars were poorly equipped/junctioned because I didn't figure out how to do the majority of the stuff).
However, I was proud of the methods I deployed for FF7's weapons.
Emerald: No I didn't use KOTR (I got annoyed by the long cutscene associated with it), I went in with 99 mega elixirs and attacked it full force. The set up as Cid, Cloud and Barret. I spammed Level 4 Limit breaks where possible, and tried to mime it with the same character as many times as possible and actually brought it down. The mega elixirs healed me each 2-3 rounds, depending on attack.
Ruby: Went in with Cloud and the other 2 dead for obvious reasons. I then sat there and casted full cure once, then mimed it repeatedly. After an unspecified amount of time, Ruby Weapon's Skill Power will get used up (so only that flamethrower and some other move from it) and then finished him off with KOTR.
