Lets say I choose to use Vista
On the off chance I decide to move to Vista for whatever reason.
What exactly are the pros and cons of using the 32bit vs. 64bit version?

It's been said multiple times in this forum that you won't get performance gains over using XP, but given the title of this thread and the content of your post, I imagine you'd like to use Vista regardless.

There is not much benefit to using the 64-bit version, unless you can ensure that all of your hardware will work in it, and that every piece of software you use regularly will function too.

As stated above to use 64-bit vista you need to check for drivers. ALSO, there is no reason to use 64-bit vista unless you have 4gb+ of ram. If you have less than 4gb go for 32-bit.
