You look like you're building an insane rig.. but here's some changes I'm gonna recommend:
ASUS Maximus II Formula LGA 775 Intel P45 ATX Intel Motherboard - $260
If you plan to someday go with a second video card and you absolutely MUST have SLI, then stick with the board you picked out. But if you're looking to build for flat-out speed you really can't get much better than P45 these days. Plus this board just
looks pretty damn cool. I think I might get one.. heh
Intel Core2 Quad Q9400 2.66GHz LGA 775 95W Quad-Core Processor - $270
You're already going quad-core, so why not drop an extra 20 bucks for the lower-voltage 45nm CPU? And re: Nehalem/Core i7 I'd say wait on those for now 'cause the die process on them will change at some point to lower the cost. And they're new so everything around them is overpriced too.

Everything else looks fine, though it's a real shame you won't go with a 4870x2 since it really kicks the GTX260's ass. I read your reason for not buying a ATI/AMD-based card, and I wonder what brand was on your card. Why does it matter - because the cardmaker is more likely the problem and not the chipmaker. I've owned both GeForce and Radeon cards at various points over the years and they're both fantastic. Likewise I've heard stories about both being horrible.
BTW If you get a expansion CPU cooler unit it will usually come with thermal compound, so you can knock that off your cost as well.
