I made a nice little meal for my bf on our first anniversary:

Starter: Eggs En Cocote. He fucking LOVES eggs so this was an ideal starter. I added a twist to it tho. Usually you crack an egg in a ramekin and cook it slowly in the oven, they come out gorgeous believe me. But underneath the egg i put spinach and mushrooms that had been fried in garlic and drained of excess moisture. Cracked an egg on top, cook as normal, serve with chunky bread :D

Main: Chicken breast stuffed with mozarella and wrapped in parma ham/bacon, whichever you prefer. Serve with saute`d potatoes and seasonal veg om nom nom!! I also made a home made garlic pizza bread to go on the side.

Desert: Lemon Tart (Bought, i'm crap with deserts ; ; ) and Ice Cream/Whipped Cream. I suggest the Whipped Cream as it can be made into a fun toy later on

As far as dinner ideas. Try this bomb salmon recipe.


Citrus cured olive oil poached salmon:

Zest 2 lemons, 2 limes, 1 orange, 1 grapefruit. Add 2 TBS sugar and 1/4 cup sugar. Mix. Coat an entire salmon slab with it, top and bottom, skinned. Put between 2 sheet pants and put a weight on top of them. Put in fridge for a 2-3 hours (don't put it in longer, as it will get too salty). After it's done there will be a lot of liquid in the pans. This is normal, as the cure pulls out moisture. Rinse off THOROUGHLY. Heat a good amount of olive oil (NOT extra virgin) in a sauté pan to 115. It is very easy to go above 115 degrees, so this probably will take a digital thermometer and a close eye. The best way is honestly to put it on low or medium low for like an hour to get it up to temp low and slow.

Portion the salmon (you say you can cook, so you should have an idea of what '1 portion' equals roughly).

Add salmon, don't crowd the pan. Doing this two or more times is better than 1 time where it lowers the temp of the oil too much. Keep in there for 15-20 minutes trying to stay at 115 degrees. Again, adding the salmon will make the temp drop, don't turn up the heat, just poach and try to let it coax up to 115.

After 15-20 minutes the salmon will appear raw. This is normal, as it is a VERY low cooking temp. However because of the cure and the method of cooking, the salmon actually is done. Try a small piece for yourself.




This is hands down the best way I've ever done salmon. It's just an entirely new experience in flavor and texture alike.

For a wine pairing, find a good pinot noir. Salmon should always have a pinot noir with it as far as I am concerned.

this doesn't sound bad at all. however, there is something about mixing food with sex that just doesn't sit right with me. small things like strawberrys or any kind of fruit or sweet is ok. but as far as eating a meal off someone... idk, i like my food and sex to be different entities.

as far as a meal, idk whether you two like seafood or not, but you could get some jumbo lump crabcakes. could use potatoes or rice, and something like green beans sauteed with some oil and sliced almonds. im sure you can figure out whatever side dishes you and him likes.

Lliandra, how long do you cook the egg for? My girlfriend adores spinach and mushrooms, I should cook that starter for her. Also, do you think it'd be ruined by adding a little grated cheese? She likes eggs, but only if the yolk is broken for some reason. Would that kill it?

You have to cook it slowly at a medium heat so the eggs don't overcook or burn. I think i let them go for about 45 mins at about 150-180. If they don't cook in that time then just leave em a bit longer. My bf likes his eggs slightly runny (sadist) so he wasn't bothered about them being too solid.
No no a little cheese sounds nom :D Underneath the egg or on top? On top would be class.
Make sure you drain ALL the excess moisture from the spinach and mushrooms or it'll end up one soggy mess ; ; (I've tried this a few times lol. Put mozarella in once, bad idea, water central ; ; )
No no i don't see no reason why breakin the yolk would ruin it. Would take less time to cook mebs but can't see any problems.
