Yea we've had horrible luck on tanking trinkets in every raid encounter. I think one of our tanks is still using Commendation of Kael'Thas right now. -_-
You really don't need to worry that much.
I was tanking heroics within an hour and a half of hitting 80 in primarily level 70 blues and kara shit, like 20 def skill from cap.
And yeah, tanking trinkets are retarded in WotLK, having the one from normal HoL or the one from Naxx is essentially required in order to be able to focus on raw avoidance and stam over def in other slots.

Still, I mean obviously you need to get a basic setup together. But the best way for you to figure out what you need to do, how much gear you need to start going with random pugs etc, is to just get into doing it as soon as you can with people you trust. If you can get a dps war that used to tank, or a holy pally that used to be prot or whatever, then it's even better as they can watch and teach directly and you can test and see results immediately.
I'm not saying go find some random pugs and try for heroic HoL achievements in your dps gear by any means, just don't be too hesitant to go out and try.
I know I made a bad impression the first 30 minutes or so of my first heroic at 80, on some extremely good and well connected players, considering I stopped playing my paladin from the 3rd week of season 2 until the expansion, and leveled as holy until 78.
However, since I was willing to listen and discuss, and take their advice, I can now hit up any one of those guys, from the 2 top ally guilds on one of the best if not the best raiding server on the world, and they'll join up without a second thought for anything they're not saved for.
I guess my point is, use the time when you're learning more about what you're doing as an opportunity to go out and make a name for yourself as someone that will listen, correct their mistakes, etc, and people will not only understand your lack of experience and gear, but actively want to help you make it better.

You're way more than fine for heroics.
Also remember def cap is only 540 for raid bosses (lv 83). For heroic bosses (82) it's 535, and heroic trash tops out at level 81 so 530. Most raid trash is 81 also, although there are some that are 82.
It's pretty much always best to stop adding def at the cap for whatever you're fighting and replace the extra with block value, stam, or raw avoidance.
yea i know im sitting at the def cap, wasnt adding more, and am gonna set it up to not even have that extra point, gem just put me there and i wasnt gonna get a cheaper one and cut out the stam
There is one good tanking 2H Axe from some quest in icecrown that has 53 def. rating and was super easy to get if you're having trouble getting to 540 def as a DK. Getting Wyrmrest accord rep is also like, amazing, for DK tanks because not only do they have a breastplate with 76 def rating (that you can add 22 to w/ enchants) but they also have a REALLY good cloak and amazing boots too (43 def rating and 58 def rating respectively). DK is kind of hard to hit 540 def before you get a lot of good items and enchants since we can't use shields, but once patch comes it will be really easy with the new runeforge they're adding.
I'm able to tank with my Demise that I just got the other day if I needed to, but once those new titansteel weapons come out I'll probably pick one of those up. I'm specced blood DPS right now and I'm not sure if blood is the best tank spec so I've just been dpsing. I'd like to try to tank in this spec but I'm scared to...
It's been a couple days since somebody asked it, but if you still didn't know the actual mats for the 75 STAM to weapon are relatively cheap; only 12 Dream Shards. Both the 75 STAM to weapon and the 40 STAM to bracers are recipes purchased from the shard vendor in Dalaran. Each recipe costs 5 Abyss Crystals to buy the last I checked.

I'm working on getting my defense set on my DK tank. I'm shooting to be able to get enough to tank heroics since I'll be hitting 80 soon.
I'm a bit confused on what's actually needed to be uncrittable. I've heard 540 Defense skill and 689 Defense Rating, but which of the two is it?
I'm currently sitting at 558 Defense but 656 Defense Rating, hence my confusion on how it works. Am I currently uncrittable and able to start focusing on other stats? Or am I missing something?
I'm guessing the Stoneskin Gargoyle rune plays a factor somewhere since I heard it adds straight to skill instead of rating.

It's -5.6% chance to be critically hit. Chances are you not being 80 (level determines how much skill you get from defense rating) and the rune are throwing your numbers off a bit. But for a raid boss you always want -5.6% chance to be critically hit, that works for all levels.
Yeah, being sub-80 changes how much rating it takes to get one point of skill, so that may have something to do with it.
To reiterate what you've heard, at 80 you want 540 Defense skill to be uncrittable. This comes out to 689 defense rating.

They removed it from the game. Decided it would have been the end-all-be-all enchant for not only tanks but possibly many Arena players, and didn't want that.
