Do you have to play these in order or can I start with the second or third one. If the order doesn't matter too much and I can choose between all 3 which should I play assuming I only get to play 1 of them.

Play in order. The first one is epic anyways.
Play them in order IMO.
I know that played in order they may be best but does the story actually continue through? I only intend to rent the game, unless I can find it for 5$ to buy, and it's likely only the most recent one will be available to rent so playing the first may not even be possible.
You won't be missing much by playing them out of order. You might be confused for a bit, but generally they explain pretty much every reference to an earlier game eventually, usually as internal monologue by Phoenix
I'd play them in order; less for the story because as mentioned it usually backtracks a little, but more for the enjoyment. I enjoyed every Phoenix Wright I've played through and I'm hoping they bring the spin off to the US. The first one is pretty epic as far as setting up Phoenix and his character so I would definitely play that first. You can shuffle around 2 or 3 next, but if you play Apollo Justice (Ace Attorney 4) first, you would most definitely be confused. >_>;
If he's right that only the most recent one is available to rent in his area, then he has no choice but to start with Apollo.
I started with Justice for All and haven't missed anything. I haven't even played Phoenix Wright 1, due to lack of availability
Play the first and only the first. The rest are pretty much the same.
half.com, ebay.com are your friends.
They're best played in order, but you're fine playing Apollo Justice alone, since it's a little more separated from the other three.
The idea that they're all "pretty much the same" and that you should only play the first is ridiculous. They share setting and basic game mechanics, like pretty much every other game series in existence. However, the focus of graphical adventure games is the story, and they all do an excellent job of presenting that. If you enjoy the first one you play, there's no reason to avoid the rest.
I've played through and enjoyed all 4 of the Ace Attorney games. The stories start off a little slow, but eventually get really good, and you don't want to put the games down. They can get a little bit tedious, when trying to find your next step in the story.. but a lot of games are like that. Usually a new element is introduced in each game. Also, what an above poster said, go with half.com, you can find a bunch of old games there dirt cheap and in great condition.
I hope they continue with this series. I didn't think I was going to like Apollo Justice at first, but I stuck with it, and it ended up being great. The stories are unbelievable, but fun. highly recommended
