    The BG Cookbook!~

    Yes a new and original thread! omg really!

    Anyways I was cooking up some sloppy joes earlier today and was going through the recipe list while surfing the forums on my laptop and it got me thinking,...

    There are a lot of smart people on these forums I bet there are a few cooks too.

    So are there any chefs out there that would like to post their recipes? It can be for anything! Super omelette, your triple club sandwich, your special glazed ribs, anything you cook that you think others would enjoy.

    Also this topic isn't just for people training in the culinary arts but also for people who might have discovered a way to make pancakes better just screwing around in their kitchen one day or that family recipe book you cook from all the time that has been passed down over the years that has your favorite dishes.

    I am hoping to get this thread as a reference for when your bored one day and need something to eat but want something different then the usual you could pull this up and cook something off here.

    I will post some a little later, got to find some good ones

    Obtain 2 slices of bread.
    Lightly butter bread.
    Insert into toaster and toast until desired coloration is achieved.
    Top with cheese, jelly, peanut butter, or any other number of things.

    Slice(s) of bread (I prefer Rye)
    Toast to desired color
    apply strawberry jelly or jam
    slice 1 cm thick banana slices and apply evenly to toast

    I also like:
    Scramble 9 or so eggs (adding a small amount of milk of course)
    Cube around 5 large potatoes and fry them
    Fry up your favorite breakfast meat whether it's sausage or bacon (the only two real choices)
    Mix together
    If desired, chop up one green pepper and add, or one onion (or both) (and I do recommend this)

    Mmm. Why settle for one great breakfast food when you can combine them all?

    And oh, add some Velveeta too. For that recipe, I'd recommend around half a block, more if you want it really cheesy.

    Obviously this feeds more than one person, reduce quantities as required.

    Kiro's Breakfast Burritos! (Also known as normal breakfast burritos with Kiro added in the title! YAY!)

    2 eggs
    Pinch basil
    Grated cheese
    Chopped onion
    Green pepper
    1/2 c. milk
    Pinch sage
    1 flour tortilla
    Salsa

    Whip by hand the eggs and milk. Add seasonings to taste. Pour egg mixture into buttered omelette pan, and cook as for an omelette over medium heat. As the egg thickens, add chopped onion, pepper, salsa and cheese to taste. Place flour tortillas on top of cheese and continue to cook on medium heat. Cover the pan. When egg is cooked and tortilla is attached, flip onto plate, roll with tortilla on outside. Top with salsa.

    Breakfast burritos are my favorite kind of burrito. But that makes sense, since breakfast foods are my favorite foods. I love eggs more than any normal person should, and oh god, bacon, fried potatoes... all that salty shit.

    Stuffed Shen!

    All these ingredients are found at super wal-marts

    Jumbo Macaroni Shells
    1 15ox bowl of ricotta cheese
    A couple of beaten eggs
    6oz mozzarella cheese
    4oz Parmesan cheese
    3 or so Chicken Breasts
    1 26oz jar of favorite pasta sauce
    1/2 ts of salt
    1/4 ts pepper

    Cook the big ass shells the way the box says to

    preheat the oven to 350 degrees

    Cut the chicken breasts up and fry in a pan over medium heat until done

    mix the ricotta cheese, the 2 eggs, 1 cup of mozz cheese, 3/4 cup of parmesea cheese, , salt, pepper, and chicken

    After your shells are boiled and shit, and all your shit is all mixed up, get out about a 4qt sauce pan, and dump like half that bottle of sauce all over the bottom. Then stuff those shells with that mixture of shit you made...a tablespoon should stuff them. After you arrange them all over the sauce soaked pan-bottom, pour the rest of that bottle of sausce over the top. Then put the rest of your Parmesan cheese and mozzarella on top. Bake that shit at 350 for about 45mins. Good shit, i promise.

    Gentle Ben's Ridiculously over-priced Buffalo Chicken Dip, so good your crockpot will disappear!

    3 10 Ounce can of chicken chunks(I do not suggest getting the real cheap chicken, it tastes kind of funky when everything is mixed together.) Drain the chicken juice.
    3 8 Ounce packages of cream cheese
    1-1 1/2 cups of Ranch dressing(depends on the person if you want more or not)
    1 cup of Franks Red Hot sauce
    5 cups of shredded cheddar jack and/or mozzarella cheese

    Heat the chicken and red hot sauce in pot on stove. Mix so all chicken is covered. Add in the cream cheese. Stir until cream cheese melts a good bit. Then add all of he cheese in. You can add in the cheese at the same time as the cream cheese but I've found it's easier to stir the cheese without it getting stuck in the cream cheese chunks that are left still.

    Heat all the ingredients until everything is mostly melted. It's ok if the cheese isn't melted all the way. Transfer everything into the crock pot and let it sit for about a half hour at the most and you're golden.

    Baked Macaroni and Cheese:

    Cook some elbow macaroni, maybe like 3/4 of a 1 lb. box, and like 2 minutes before it's done cooking, take it off the heat and drain it.

    While Macaroni is cooking, in a large pot, heat up:6 tablespoons of butter and a little bit of ground mustard.
    After the butter is all melted: Add 2 cups of milk and some paprika and let that simmer for like 5 minutes or so until it's warm-hot.
    After simmer: Temper in one egg and about 8-12 oz. of Sharp Cheddar (cut up yourself from a block or pre-shredded from store like in the plastic bags from Kraft)
    Stir Macaroni into the pot and mix the mixture well.
    Salt and Pepper to taste, I like to add a little powdered garlic at this point.

    Pour the macaroni into a baking dish and in a saucepan just throw in 2 tablesspoons of butter, melt it and throw in about a cup of breadcrumbs. Cover the macaroni and cheese with those buttered breadcrumbs and pop that sucker in the oven for 30 minutes.

    Enjoy your fucking tasty Macaroni and Cheese.

    I do shit like this a lot, you only need to measure stuff the first time around, the second time it's really easy to eyeball the shit. It tastes at least 50x better than box macaroni. I only recently tried mac and cheese and it was because I had a craving for it one day and remember my mom making it for thanksgiving when I was a kid.

    Positively fantastic chocolate pie; it's really simple and it's always a hit at parties and stuff.

    1c milk
    1c heavy whipping cream
    1/2c sugar
    3Tbsp unsweetened cocoa
    2Tbsp corn starch
    3/4c semi-sweet chocolate chips
    1 egg, slightly beaten
    2 egg yolks, slightly beaten
    2Tbsp butter, softened
    1tsp vanilla
    Oreo pie crust (or make your own pie crust, your call)
    whipped cream/Cool Whip

    In a pot, stir together milk and whipping cream. Cook over medium heat until warm. Mix together sugar, cocoa, and corn starch; gradually add to milk mixture. Stir well, until sugar mixture is well-mixed in milk. Add chips, eggs, butter, and vanilla. Continue cooking, stirring constantly, until pudding significantly thickens. Let cool for 20min; place in pie crusts, let cool in refrigerator for ~2hrs. Top with whipped cream/Cool Whip when serving.

    Guyver's Ranch Stew

    1 Box of Hamburger Helper Cheese Burger Mac
    1 lb. Ground Beef( I prefer sausage sometimes)
    1 can of Ranch Style Beans
    1/2 lb. of Bacon(thick cut prefered)
    1 1/2 cup of montery/cheddar cheese

    Cook HH as normal. While the HH is cooking, start making the bacon. Once done, add in bacon with the HH. Transfer it to a baking pan, pour cheese on top. Put in oven for about 5min to melt the cheese.

    Stuff is very awsome to say the least. We have a potluck here at work for my team once every 2 weeks or so, and whenever I bring this stuff, none of it is left over. Hell, last two times, I didn't get a chance to have it hehe

    zoob's baked pasta casserole.

    1 bag of penne pasta (the tubes)
    bag of grated mozzarella cheese
    Parmesan cheese
    olives
    pepperoni
    sausage
    insert other fillings here that go well with pasta
    jar of tomato based sauce


    Boil water and cook the pasta.
    preheat oven to 350
    while the water is boiling and the pasta is cooking saute any fillings you want. Sometimes I do onions, bell peppers and sausage.
    take out casserole dish and cover the bottom with a coating of tomato sauce.
    pour in pasta.
    Mix fillings in with pasta.
    cover with mozzarella and then Parmesan.
    bake in oven for 30 min or until crispy brown on top.

    another way I make it is I go to Trader Joes and buy their pre-made breaded eggplant cuttlets cook those and then put them on top of the pasta. You can experiment and try different pizza toppings in the casserole.

    Creamed Spinach

    You will need:
    1 bag of spinach
    About a tablespoon olive oil
    About a teaspoon each of salt and pepper or more if you are into that
    Heavy cream
    Monterey jack cheese

    1. Heat pan/skillet to medium high on stove
    2. Add olive oil, spinach, and salt and pepper
    4. Mix Mix Mix with a big spoon or whatever
    5. When spinach is all shrunk add some splashes of the cream. Don't drown it. Just over enough to cover all the spinach
    6. Reduce heat to about 1/2 of what you have going
    7. Mix for about 30 seconds
    8. Sprinkle ze cheese
    9. Presto. Makes about 2 servings

    Almond Curry Rice

    You will need:
    1 cup of rice. Brown/White/Whatever you want
    2 and 2/3 cups of broth. Vegetable/Chicken/Whatever you want
    About 1 tablespoon of curry
    About a 1/4 of an onion
    Handful of slivered/chopped almonds
    About a tablespoon of olive oil

    1. Heat a pot on the stove filled with the broth to boiling
    2. Toss in the rice
    3. Reduce to lowest setting/simmer and cover
    4. Worst part...wait about an hour to cook =(
    5. 10 minutes before the hour is up go chop up your onion
    6. Heat a pan to medium high
    7. Throw the almonds on the pan for toasty goodness. Takes around 5 minutes. Make sure to mix them every now and then so they don't burn
    8. Add olive oil and onions to the almonds and sautee for about 5 minutes
    10. Add curry and onion/almond mixture to rice and mix it all up
    11. Stuff your face

    We call this a Hobo Dinner...

    Just get a sheet of Tin foil and throw everything you want in it,
    Carrots, Potatos(though relize stupid potatos take alittle bit longer to cook if not cut small enough), Chicken, Beef, Onions, some Peppers,Really I mean anything.

    I suggest cutting everything up small, meats can be alittle bit bigger but something that usually takes longer to cook smaller seems to be the better.

    Throw your fave. seasonings in there usual for me is Old bay, seasoned salt, what ever else I can find that sounds good. Add alittle bit of water not a whole lot but enough where your not cooking dry.

    Wrap the whole thing up with the tin foil. make sure tjere are no holes or it isn't to small, add more tin foil if ya need to. Pretty much don't want to beable to see what ya put inside

    Usually its cooked on cooking fire, but really a charcol pit, Grill, Oven all work. You want to keep the Heat low about 250-300 and let it cook for about 2hr ish I never really time I just check it every now and then to see if its done haha... Once all the things ya threw in are fully cooked to your liking Enjoy.

    I like it cause its quick and easy to do and everything cooks very well together and its all done in one small easy go.

    More of a baker myself but I can share some recipes I've used/changed/come up with over the years, most are really simple:
    Peanut-butter and Apple!
    A sweet apple works best, like Royal Gala or Figi, but any will do; slice thin
    Whole Grain bread (adds taste)
    Peanut Butter
    Toast the bread to desired hardness
    Apply generous amount of peanut butter to one or both slices of toast
    For a closed sandwich, place apple slices on the peanut butter to desired thickness
    If you are making an open-faced sandwich, place apple slices on both pieces of toast.
    Enjoy! The apple tastes great with peanut butter and really helps to cut the thickness of the peanutbutter down. Feel free to change that up with banana slices instead, or with. Adding honey and almond slices sounds like a cool idea too.

    I made these at Christmas - Chocolate-covered pretzels
    Now I don't have exact measurements because I just eye'd it so.. yeah..
    Depending on how many you want to make, I think I got about a pound and a half of chocolate. You should go to your local bulk-foods place for the ingredients, cheap and awesome.
    1 1/2 lb of large belgian milk or dark chocolate chips, depending on personal preference, I got milk
    A bag full of decently-sized salted pretzels, large probably - a bulk foods place is perfect for these since you can pick them out individually and know they aren't broken.
    A tiny amount of crisco or any other kind of shortening
    Sprinkles, sparkles, whatever you want. I did these at Christmas so I had red, white, and green coloured sugar and silver balls (edible).

    If you don't know how to make chocolate, know that you can't cook directly over heat, so you need to either have a double-boiler or create one. I don't have one, so I boiled water in a large pan and placed a metal bowl on top with the chocolate inside, stirring with a wooden spoon frequently. Place about a teaspoon of shortening in the chocolate and melt together.
    Line cookie sheets with parchment paper.
    When chocolate is melted, take a pretzel and dip it into the chocolate on an angle, leaving room for your fingers so they don't get burned. Gently scrape off excess with the spoon you used to stir the chocolate, and then place on the parchment paper. DO NOT try to cover the uncovered area of the pretzel, I purposely didn't because it allows people to enjoy the treats without getting chocolate all over their hands. Ingenious, I know. This takes a little while, so keep the water fairly warm under the chocolate and stir every once in a while.
    When you've made as many as you want, there i no need the hurry. The chocolate will stay wet for a little while. Sprinkle with whatever you got for it and then place in the fridge. The cold will cool the chocolate really quickly, so you don't have to wait long to try them.
    Another idea, for something more fancy is getting the coloured white chocolate chips, melting, and then drizzling over the top. You can also add a little flavour to the chocolate such as peppermint extract.

    It isn't my recipe, but I have a little twist on it. When I did these the first time, I misread and added a cup less of flour. The result was reallly flat cookies. Not wanting to waste it, I made all of the dough, then took the 'cookies', crunched them and rolled them into a big ball while the chocolate was still warm, keeping them together. I then made small balls out of the larger one, rolled it in coconut shavings, and then placed it on parchment paper. After placing them in the fridge, what resulted was my own numminess which I called Cookie-Balls. Try em, they're a pain in the ass to make but they're pretty freaking good.

    Outside of baking I make uhm.. I made a Turkey panini with fresh turkey slices, avocado, tomato, lettuce, mozzerella and topped with a little caesar dressing.

    I also make a lot of pasta-salads in the summer.
    1 can of mixed beans, twisty pasta, canned diced tomatoes, cucumber, cilantro (additionally you can add canned baby corn or frozen corn slightly boiled, whatever you feel like)
    Make the pasta, cut up the cucumber into desired thickness and quarter them.
    strain pasta when it's done, put in large bowl and sprinkle with olive oil
    Add all the ingredients to the hot pasta, including salt and pepper and let sit for a little or put in the fridge, it's great. If you want more flavour, add your favourite salad dressing. Ranch/Caesar for something creamier, Italian for something more sour, etc.

    I have a crapload more but that's all I'll post right now.
