    Lin's Absolutely Awesome And Super Easy Stolen Roast Chicken Recipe

    I stole this from epicurious.com and added my own je ne sais quois. It is seriously easy. If you can set a timer and open an oven door, you can make this chicken, and you will wow your guests!

    * One whole chicken, pref gutted/plucked/etc. if you live in the sticks you can do it yourself
    * Salt and ground black pepper
    * lots and lots of thyme
    * 3-4 cloves garlic
    * chopped up roasting vegetables, e.g. potatoes, sweet potato, carrot cut lengthways does really well, pumpkin, etc.

    Preheat the oven to 230 deg C (450 F).
    While the oven is heating up, rinse (in water) and very thoroughly dry the chicken, inside and out, dry with paper towel. It'll be a bit tricky to dry it properly inside, just shake as much water as you can out.
    Liberally apply salt, pepper, and thyme over the chicken, inside and out. I like to shove an extra lot in the middle of the chicken.
    Peel garlic cloves and throw 'em in the middle of the chicken.
    Chop up your vegies and place them around the chicken on the baking dish. You *need* these; if you don't have the vegies to soak up the delicious juices, your chicken will smoke out and burn. Make sure the vegies don't touch the chicken or the skin of the chicken won't crisp up deliciously there. Sprinkle over with some salt, pepper, and thyme.

    Cook for 60 mins, or until the juices run clear when you stab a nice big juicy breast bit with a knife or similar.

    You'll get a delicious crispy skinned chook*, and some wonderful roasted vegies seasoned by the salt, pepper, thyme, and garlic flavoured chook juices.

    YUM YUM!

    mouth watering cheesy burgers

    -Hamburger meat
    -cubed spicy velveeta cheese
    -chopped cooked bacon(or bacon bits if your lazy)
    -any kind of hot sauce
    -garlic powder
    -onions

    take all your hamburger meat and put into some kind of mixing bowl
    add your cubed cheese and your bacon. add as much hot sauce you think you can handle. add about 1 tbsp of the garlic powder and chop and cube the onions and add that to the mix. make out your patties(i suggesst making them rather thick. fry up like normal hamburgers add cheese to top and serve on bun with your favorite toppings.

    i make these about once a month and they are so mouth watering good i cum buckets when i eat them.

    Lin's Mum's Super Yummy Aussie Self-saucing Chocolate Pud!

    Pudding in Australia isn't that junk you have in the US. It's a delicious cake-like concoction that cooks in its own sauce. Here's a super easy and super yummy traditional Aussie chocolate pud! As made by my mum, who is a super cook!

    I've even gone to the trouble of translating real measurements for you

    60g (2 and a little bit oz) butter
    1/2 cup caster sugar (or white sugar if you don't have caster, but caster works better)
    1 cup self raising flour
    1 tablespoon cocoa powder (plain unsweetened cocoa, not hot chocolate style cocoa)
    1 egg
    1/2 cup of milk

    1. melt butter and sugar in saucepan
    2. sift flour and cocoa over top
    3. beat in egg and milk
    4. grease an oven proof dish (e.g. souffle dish) and pour in pudding

    Sauce
    1 tablespoon cocoa powder
    1/3 cup caster sugar
    1 cup hot water

    1. mix sugar and cocoa and sift over pudding
    2. carefully pour hot water over the back of a spoon over the pudding so as to not make holes in the pudding

    Cook at 180 deg C (350 deg F) for 35 mins, and voila! Delicious chocolate pudding! Best served with vanilla ice cream.

    PS It's Australia Day today so that's why you're getting some of my top secret Aussie recipes :D

    Lin's Mum's Aussie Jam Drop Bickies

    A bickie is a biscuit, which Americans call "cookies". These particular ones look like this:

    I have no idea if Americans have real jam, it's like jelly, but with delicious bits in it. Anyway it's spreadable fruit preserves that are delicious on toast. It's the main feature of these yummy bickies!

    So here's the recipe!

    125g (4.5 oz) butter
    3/4 cup caster sugar
    1 egg
    2 cups self raising flour
    a bit of vanilla
    strawberry/raspberry jam

    Preheat oven to 180 deg C (350 deg F). Cream sugar and the butter (creaming is where you get your fingers in and rub the butter into the sugar until it makes a nice mixture). Add the egg and vanilla and mix together. Fold in the flour. Grease a baking tray and spoon in teaspoonfuls of the mixture into round blobs. If they look a bit small that's fine, they spread out a *lot*. Make little holes in the top with your knuckle, and fill these with the jam (about 1/5-1/3 teaspoon). Cook for 10-15 mins or until golden brown.
    If you like your biscuits hot off the tray beware that the jam gets very hot!

    Tomk's Chili

    A grocery store near me sells dried Chilies. I buy a package of New Mexico and California Chilies. I tried Pasillia but they were kinda raisin like and I like the smoky flavor of the New Mexico and Cali types. I remove the stems and seeds and grind them up before hand and keep them separate in mason jars. I'm not perfect with the seeds because they add some heat.

    In a pan toast 2 tbs of each with 1 tsp of Cumin till it smells super. Set aside.

    In same pan brown a lb of ground beef with one chopped onion. Again super smell.

    Add both to a large pot with:
    2 cans diced tomatoes
    1 can beef broth
    1 diced green pepper
    2 cloves of garlic
    tsp oregano
    2 tbs Masa Flour
    optional chopped Serrano or jalapeno pepper, depends on heat
    Salt and pepper to taste

    Simmer for about an hour. I sometimes serve over rice.

    Phar's Balls Awesome Ramen

    I came up with this when I finally got tired of plain insta-ramen.

    2 packages ramen and the spice packet from a third (whatever flavor you like, I prefer the oriental flavor for this.)
    2-5 cloves of garlic, crushed (I loooove garlic so I'm on the high end here)
    1 tbsp minced fresh ginger
    Juice of 2 limes
    1/4 cup fresh cilantro, minced
    1/2 cup sliced or chopped fresh mushrooms (preferably shitake, but any kind will do)
    2/3 cup bean sprouts
    1 hard boiled egg per person

    In 6 cups of water, add the spice packets from the ramen, garlic, ginger, and lime juice. Bring to a boil and add the noodles, cilantro, mushrooms, bean sprouts, and hard boiled eggs. Cook 2-3 minutes until the noodles are tender. Garnish with more cilantro if you choose and a wedge of lime. Serve with white rice and a chick breast or pork cutlet.

    serves 4 people, and note that you will want some big ass bowls, not the typical soup/cereal bowls.

    Ok here's the ultimate recipe from the restaurant I work at

    Uptown Beef

    Filet Mignon - Medium Rare, sliced thin and on the bias.
    Top with uptown sauce

    Uptown Sauce
    Mayonaise
    Smelt Roe
    Green Onions - Sliced very thin
    Eel sauce (a basic recipe here - Unagi Roll (Broiled fresh water Eel) Recipe : Rachael Ray : Food Network , the 'unagi glaze') Gah I can't believe I just linked to Rachel Ray...eww
    Sambal chili sauce

    Mix the ingredients together. There is no exact proportion, but it should be very runny, and spicy yet sweet. It's hard to explain because we all just eyeball it until it tastes right. Basically start out by mixing the mayo, smelt and sambal together to form a spicy sauce used in sushi rolls. Then add the eel sauce until it turns a light brown and is smooth. Then add the onions, and more sambal until it is as spicy as you want.


    It's such an odd sauce, but every single person we've ever served it to (customer, manager, cook, anyone) says it's one of the best things they've ever had.

    Espresso cakes:
    Here is a quick and easy recipe for people who enjoy coffee/espresso


    Ingredients
    For the coffee cakes:

    * 2 1/2 cups all-purpose flour, plus extra for pans
    * 1/2 heaping teaspoon baking powder
    * 1/2 teaspoon baking soda
    * 1/4 teaspoon salt
    * 1 cup sour cream
    * 1/4 cup instant espresso powder
    * 2 sticks butter, softened, plus extra for pans
    * 1 1/2 cups sugar
    * 2 eggs, plus 2 yolks
    * 1 teaspoon vanilla extract

    For the frosting:

    * 1 stick butter, softened
    * 1/2 cup creamy peanut butter
    * 1 cup confectioners' sugar

    Directions

    Special equipment: Stand mixer and 4 (3/8-pound) mini loaf pans

    Preheat oven to 350 degrees F.

    Butter and flour mini loaf pans. In a small bowl, whisk together flour, baking powder, baking soda and salt. Mix together the sour cream and espresso until dissolved.

    In a stand mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add eggs and vanilla and mix until well incorporated. On low speed, add half the flour mixture. Mix until just combined. Add half the sour cream and mix until combined. Repeat with remaining flour and sour cream. Pour into prepared loaf pans filling halfway with batter. Bake 40 minutes or until a toothpick comes out clean when inserted in the center. Cool in pans 10 minutes. Remove from pans and cool on racks.

    For the frosting: In stand mixer, mix together butter and peanut butter over medium high speed until smooth. Add confectioners' sugar and mix until smooth.

    Top mini loaves with peanut butter frosting.

    You don't need a stand mixer, but it makes it tonsss easier then mixing by hand.
    Very tasty. I highly suggest trying to make them thin (Around 2" thick, 3 tops).

    Also for an easy dinner if you plan ahead, get Newman's Own Light Lime Vinaigrette and some pork. Marinate over night. Grill... Delish.

    Crock Pot Chili~

    The most expensive thing on the list is the beef for sure.

    2lbs of Ground Beef (or turkey whatever you prefer)
    2 cans of Red Kidney Beans, rinsed
    1 large can of whole tomatoes, roughly chopped (or a can of diced tomatoes whatever)
    1 small can of tomato sauce
    1 whole roma tomato
    2 medium onions, chopped
    1 can of jalapeños, chopped (the last time I made this I had to take the seeds out of each pepper because my best friend is a wuss)
    1 packet of chili seasoning
    Salt and Pepper to taste
    Taco Bell Sauce... We bought a bottle from the store and just added it in.
    Chili powder to taste
    Garlic Powder
    Onion Powder

    Basic instructions:

    Cook the ground beef with the garlic and onion powder, drain and add to the crock pot.

    Add all the other shit and cook on High for 4 hours or low for 8 hours.

    We added a dollop of sour cream in the middle and sprinkled cheese on top. =)


    Something awesome I made this last weekend -

    7 layer dip

    2lbs of ground beef
    1 can of diced green chilies
    2 cans of refried beans
    1 large container of sour cream
    1 packet of taco seasoning
    Guacamole - I made my own using 2 avocados, 1 lime, 1/2 c onion, and 1/2 a tomato
    Shredded Cheddar cheese
    Green onions, chopped
    Olives, sliced

    In a spring-form pan (what you make cheesecakes in), add the 2 cans of beans to the bottom and spread them out evenly.

    Cook the ground beef, drain, and add the can of green chilies, let it cook for a few more minutes and absorb most of the moisture. Let the meat come to room temperature, then layer on top of the beans.

    Add the packet of taco seasoning directly to the sour cream and mix it well, Layer it on top of the room temperature beef.

    Layer the avocado.

    (Up to this point can be done ahead of time, then place the pan in the fridge to let everything set up a bit.)

    When it is time for the dip to be consumed, add on the shredded cheese, olives, tomatoes, and green onions.

    Remove the outside of the spring-form pan and if you didn't fuck up you should have a totally sweet looking layered dip =P

    Mash potato recipe I did up on thanksgiving when i discovered midway that I had no salt or pepper. Turned out awesome.

    Boil 7-10 lbs potatoes with 2 cups fine diced onions & 2ox minced garlic, until you can poke through potatoes fairly easily, dump into caulinder and thoroughly drain.

    Then drop into a mixer set on low, and add in a pound of butter, 1 cup 2% milk (ideally you' warm the milk & butter in a small saucepan before adding to potatos but not 100% necessary), & 1/4 cup white cheddar popcorn seasoning. Mix on low 3 mins, mix on high 1 min.

    I only know how to make a few meals, and they are mostly off the directions on the box.. the only things I do that may be slightly unique are the following:

    When making a burrito, I want it quick, but I want it crunchy. So I always microwave the assembled burrito for like 1-2 minutes, then brown lightly in a frying pan (either with or without oil but usually I do it without).

    And then the other thing that I know how to make is as follows. I figured this out completely by guessing, didn't look at any recipes so it may not even be the unique but its delicious. There is only one other tuna creation here, so I figure I should post it.

    Tuna Melt goodness:

    Don't have any exact measurements because I just do it by eye and use whatever sized can of tuna I can find in the cupboard, but here are the ingrediants:
    * 2-4 Pieces of Sourdough Bread (1 or 2 sandwiches)
    * Butter/margarine (I use I can't believe its not butter!)
    * Can of Tuna Fish
    * Mayonnaise
    * Block of Chedder Cheese +grater
    * Grated Parmesan Cheese
    * Garlic Powder
    * Lawry's seaoning salt
    * and then if you like onions, I guess you can squeeze that in there or use onion powder as well.

    Put tuna in a bowl, add a big spoonful or two of mayonnaise and mix.
    Mix in onions/onion powder if thats your thing (Clearly, I don't like onions!)
    Butter bread lightly.
    With the butter'd side of the bread facing down (the buttered side faces outwards! This is important!), spread tuna on unbuttered side evenly.
    Grate cheese liberally and put on top of the tuna (should be almost a 1:1 ratio or higher of cheese to tuna in terms of volume)
    Put on the other piece of bread, with the butter'd side facing up.
    Cover the top of the bread with a very thin layer of Parmesan. Sprinkle on some Lawry's and Garlic Powder.
    Turn on stove with frying pan on it. Put the Season'd side facing down.
    While its browning/melting the cheese, do the same thing with the Parmesan, Lawry's, Garlic Powder on the other side.
    Turn it around when golden.
    Take off when other side is golden.
    Eat!

    -Get a biscuit and cut it in half
    -Add scrambled eggs
    -Create Theories over whether bacon or sausage is better
    -Add Maple Syrup for epic win though it is unlikely you will get past step 3 ever unless some fluke happens like SE supermarket runs out of bacon on accident which lets you reach a conclusion and achieve your epic win.

    Uncle Met's World Famous Chicken Salad: Mexican Style (because it's better)

    Ingredientes:


    • Chicken breasts
    • Potatoes
    • Green peas
    • Carrots
    • Mayonnaise
    • Crema Mexicana
    • Jalapeños
    • Tostadas



    Metodo:

    First, I'd recommend you marinate the chicken breasts with lemon juice to get rid of that awful meaty taste. Combine all your veggies in a bowl and depending on how big the mayonnaise container is, use half of it. Go ahead and add la creama, but make sure it's twice the amount of that mayo. We don't want the mayo flavour to be dominat. Next, boil the breasts and slice it into thin pieces.

    Once you have the chicken ready, mix it with the rest of the ingredients. Last, let it cool down in your fridge because it's better served cold. Add jalapeño to taste. Buen apetito.

    A couple of my variations on common things.

    Kraft Macaroni and Cheese

    The box indicates to put in a 1/4 of milk with like, 4 table spoons of butter. I Personally put in 1 cup of milk and 1 table spoon of butter.

    Once the macaroni is done cooking (for me just barely once it bloats up, so it's not completely soft, theres still some chew left in it) and then i drop the butter in the pan and let it melt a little then add the milk and let all of the heat up a little. Then I slowly add in the powdered cheese.

    Now there's two ways I eat this, I either dump the macaroni in as soon as it's done mixing, which makes for a somewhat soupier macaroni and cheese.

    Or you can stir the cheese over the stove for 5-10 minutes to make it a thicker/creamier cheese sause. Very delicious

    This next one depends on where you live and if you're willing to hassle the McDonalds employees to make a unique sandwich and if they're willing to complie

    I work at McDonalds so this is something I've come up with for myself. If you live in an area that has the Southern Style Chicken Sandwich. (Normally comes on a steamed bun, with butter and pickles with a piece of southern style chicken)

    The way I make it is I have a bagel toasted, with the butter applied, minus the pickles, plus lots of CheddarJack cheese, plus Bacon if you so desire (you should), and top it off with the chicken that normally comes on it. It's probably one of the best sandwiches i've designed myself. (This is pretty easyyo make it home too with a different type of chicken, Turkey might be good also. Making it at home also opens up new options for cheese)

    Not really a hard to make or brilliant idea for a sandwich but it's one that I enjoy a lot

    I'm also aware some McDonalds don't have all of the sandwiches that other stores do.

    Dav's Sweet Toast

    Extremely simple and quite delicious.

    1 tsp. Cinnamon
    1 tsp. Sugar
    1/3 inch square of butter/margerine
    1-2 Slices of bread (preferably something white)
    1 Towel

    Optional:
    Various fruit (I find Strawberry slices or banana slices work best)

    Place butter in a microwave-safe bowl. Heat until gooey (not fully melted if you can avoid). Mix in cinnamon and sugar, and mix together thoroughly. Toast bread as long as desired. Pour/spead on butter concoction evenly on toast.

    This is sufficient to eat by itself. However if you are looking for something more, slice up a strawberry or two, or perhaps a banana and apply evenly to each slice of toast. If you have two slices, you can then turn it into a sandwich.

    The final ingredient, 1 Towel, is needed to clean up after the orgasm you have when first tasting this.
