Every deal is 75% off (and all are $3.75) regardless of how many you pick.
The standouts are Grimrock and Torchlight, but Inquisitor is a deal as well. (It's been sitting on Steam greenlight for months, but you can get it now on GOG, ON DEEP SALE! Go look at the screenshots.)
Then there's Geneforge 1-5 pack and The Real Texas, w/e. Don't need to get 'em.

Individually they're 66% off at $3.40 each, (the price on GOG at the moment is $5), but the whole pack discount pushes the rate higher.
It could be difficult for GOG to beat the $2.27 per game price point, $2.50 is generally the best you see. But if they do have a Fallout day, they may be a better bet to get the individual games instead of the pack.

If, for some bizarre reason you do not have Fallout 1 and 2, you should seriously consider using this opportunity to get them.

Anyways, Thief 1, 2, & 3, Deus Ex & Invisible War, and Anachronox. All together for $14. Just buying T1/2 and DE would be $15, so it's basically buy 3 get 3 more. Dunno how good Anachronox is, but we all know T3 and IW are not quite as awesome as their predecessors.

For comparison, the Thief collection on Steam is $27 at the moment, and both those Deus Ex would cost you $20.

Defender's Quest is actually on a deeper sale here today than it was on Steam a few days ago. However, DUDM as a pack has almost always been on a very deep sale on Steam, usually $5, here it's $9.
They're all pretty good games though, SpaceChem is a demonically challenging puzzle, it will make your brain do work.


EDIT: Jade Empire on a good sale on Steam today as well.
EDIT EDIT: Crusader Kings II is a midweek deal. It's a pretty decent grand strategy game from Paradox.

Have the Ultima games aged well? I know the Underworlds suffer from ancient UI decisions and the early 4 Ultimas needing a manual for all the keyboard commands, but I never played 5 through 9.
