Step 3: wait 27 days
Step 4: Check Marble Bridge door again
Step 5: Profit.

You only need to wait 27 days if you have dropped your ring once before and gotten a new one.

I've never changed my ring before. However I'm not quite sure on how to do it still. Drop the ring and go to the Marble Bridge eatery in Upper Jueno iirc. What happens when I go here? Isn't this place only open to certain players under specific requirements? Do I even have to go inside or just check the door.

If I do have to go inside can I drop the ring when I get inside?

If you drop the ring and click on the door you will get a CS. The first time you drop your ring you immediately get to choose another one. The second time and beyond there is a wait after the initial CS after dropping before you can reobtain. It does not need to be your special day to enter the eatery in order to receive the CS as you never actually go inside.
