    It's whats for dinner

    What's BG having for dinner? If there's a particular meal you like, you're having something special, or even if its a normal dinner night for you let's hear it. If you want, include a simplified recipe for others to foolow (or if you want you can make it detailed, its your choice).

    Today I had the apartment to myself because my roommates went to the park to have a catch so Im making fresh salsa and guacamole. Also grilled up some chicken and going to make chicken quesadillas.

    Salsa is just thrown together until it tasted good. I included:
    Yellow pepper
    Red pepper
    Green Pepper
    Red Onion
    Tomato
    Lime juice
    Cilantro

    Guacamole is:
    3 avacados
    garlic to taste
    hint of cilantro
    lime to taste
    bit of red onion

    Quesadillas are simply cheddar and pepper jack cheese with the chicken and peppers and/or onion depending on what the roommates want. Using 2 tortillas to make one large quesadilla and top with a dollop of sour cream, some guac and some salsa.

    And of course you need a drink while making dinner. Tonights drink is a simple rum and coke.

    Coconut rice and gandules and Turkey

    2 cups long or short grain rice (rinsed)
    1 can of coconut milk
    3 1/2 cups of boiling water
    2 Tablespoons of sofrito**
    1 pound of gandules (pigeon peas)
    4 ounces of tomato sauce
    2 Tablespoons of oil
    Salt to taste

    Sofrito**: 3 cloves of garlic, 1/2 Banana or Bell pepper (chopped in fine pieces), 1 teaspoonfull oregano, 3 Culantro leaves (chopped), 1 medium onion (chopped), and 2-3 Aji dulce.

    1/2 turkey, bake and spice to taste

    Platanos maduros frito

    Probably my favorite style of rice, but would have skirt steak instead w/chimichurri sauce.

    1/2 cup olive oil
    2 tablespoons fresh lemon juice
    1/3 cup minced fresh parsley
    1 clove garlic
    2 minced shallots
    1 teaspoon minced basil, thyme or oregano, or mixture
    Salt and pepper to taste

    Combine all ingredients and let set for at least 2 hours before serving. No steak is complete w/o this sauce.

    3 of my friend's birthday are this weekend, so we are all going to celebrate out with some friends, at some sushi place called Red. Happy Hour here we come!

    Fall off the Bone BBQ/Terryaki Ribs.

    1-2 Full Racks of Ribs. Pork Baby Back are my favorite.
    1 Lemon
    1 Onion
    Garlic Salt
    Pepper

    Sauce:
    4 Cups of Water
    2 Cups of Katchup(BBQ Sauce for BBQ Ribs)
    1 Cup of Worhsire Sauce

    Cut each rib individualy and place them in a large roasting pan. Coat each rib with garlic salt and pepper. Slice the lemon and onions into rings. Twist the lemon slices, where it resembles a $ sign. Cover the ribs with lemon twist and onion rings. Bake at 350 degrees for a hour and a half. Meanwhile, put the water, katchup, and worshire sauce in a large saucepan. Stir untill well mixed. Bring to a boil, and simmer untill the hour and a half is up on the ribs.

    Pour the sauce mixture on the ribs, where all the ribs are covered. Bake at an additional hour to a hour and a half and enjoy. I like to put these over white rice. Potatoes are fine as a substitute, but not to put over.

    I would always go with Baby back over Spare ribs. Baby back are more tender and have better meat.

    We're having a bunch of friends over. The gf prepared chicken salad (perfect for the sunny weather) for lunch, and I took care of the roasted chicken, arroz, salsa verde oh roja for dinner ;o

    Well this wasn't today, but it was Thursday night when I went to the best rated Italian restaurant in the state, that is also owned by the same guy who owns one of the number one rated places in the southeast.

    First course - homemade tortelloni (traditional type) with prosciutto and a slight bit of goat cheese on top.

    Second course - Fresh flash fried (but not breaded) globe artichoke hearts with a traditional aioli. The server recommended these to us because apparently they had a huge shipment of spring veggies come in from one of the local farms. The freshness and quality of the chokes were unreal. And they were cooked simply so you could still get what they were all about.

    Main - Grilled triggerfish (one of my favs anyways) with crawfish over a bed of calamari and leek risotto. This dish was absolutely fantastic in every way. Every single thing was cooked perfectly, and the crawfish were crazy fresh. None of that pre bagged stuff that most places use (because seriously, it's a bitch to have to go through hundreds of crawfish just for that tiny bit of meat). There were at least 20 pieces of crawfish in my dish too.

    Dessert - I actually asked if they could just cut up some strawberries for me and drizzle some honey and whip cream on top even though it wasn't on the menu. They didn't have a problem with it and actually offered more dessert style sauces to go with it if I wanted any.

    All in all the meal cost 100$s a person (including a bottle of wine split between me and my friend). Worth every penny.

    Grilled cheese with bacon, and avocado. I mix salt, pepper, and cayenne pepper into the avocado before putting on the sandwich. Incredibly delicious and simple.

    Chicken Katsu with a side of spicy curry, steamed rice, salad and miso soup. Asahi beer was the drink of choice.

    Leftover pot roast with vegetables, baked potato, and salad tonight.

    Next new dinner will probably be lamb in curry yogurt sauce and indian spiced couscous.

    Tonight is a whole roasted chicken in a roasting pan...letting all the drippings drop onto red baby potatoes roasting below. It's going to be awesome.

    Crock pot pot roast!

    Cut up 1 onion, some celery, and some red potatoes and tossed a few baby carrots into the bottom of the crock pot. Put about 3lbs of beef round tip on top, chopped up some garlic and put it on top of that with some salt and pepper and cooked on high for 6 hours. Turned out absolutely perfect!

    Here's something quick & dirty a friend and I came up with.. low rent dry-rub chicken & rice!

    You can use whatever rice you want for this.. I usually just use a cup of plain white rice for every 6 chicken legs.

    Preheat your oven to 350. Take some chicken legs with the skin still on, rinse them in cool water and dry them off completely with paper towels. Roll the skin back and cut 2-3 deep slits in the meat on each side. Then take your favorite chicken seasoning, dry-rub barbecue seasoning, or whatever and coat those badboys up real good. Roll the skin back up and give that a coating if you want. Put the legs on a foil-coated broiling pan and stick 'em in the oven for about 10 minutes, then flip them over and cook the other side for 10 minutes. Check to be sure they're cooked all the way, and if not go flip again and go another 10 minutes & repeat until fully cooked.

    Serve the legs over rice. If you want some extra kick, mix the pan drippings into the rice before serving.

    I do that too but I add a cup of merlot or cabernet and it makes the most amazing broth/sauce with the juices from the roast. Try it.

    That sounds really good. :3 The beef round tip I bought was over 7lbs so I cut it in half and the other half is in the freezer. The last recipe I found suggested putting a can of Campbell's french onion soup, still condensed over the tip of everything so I want to try that as well.
