As an aside, if anyone is thinking they'd like to see more of him (Iwan Rheon), he was in the first three seasons of Misfits. A great show, and he is very much a different character.

TV only here.
I have no idea who his torturer is. It's intriguing to me because of how Theon's arc ended in season 2. I have no idea how he went from being carried away by his men to this. But if they take multiple seasons to reveal it, it's gonna become frustrating instead. They can keep it going for now, but sooner or later they need to reveal something more if they want to keep people interested in whats going on with him.

Tv only here. I'm guessing it's Bolton's bastard, who was given Theon by Theon's own men when they left Winterfell. Plus, the torture rack looks just like Bolton's flag shown in his castle.

I would say it's confusing but not intriguing. iirc, it's someone from Bolton's ranks as he was charged with taking back Winterfell and the fact that the rack that Theon is strapped to looks just like Bolton's sigil. As to who SPECIFICALLY this torturer is, I don't think that we have very much of anything to work with to figure that out. You can't even trust what the guy says since he's such a great manipulator that he would kill his own men just to perform a ruse. With his identity so muddied, it's hard to say that I'm that intrigued by who he is. Could be Boltan's man squeezing info and punishing a traitor (we see how they deal with POW's), could be a Lannister spy trying to get info and is just a bored sadistic fuck, could be a Greyjoy bastard that's jealous of Theon for whatever reason and is finally taking it out on him, could be all of the above or something else entirely. When it's that vague with so little clues to go on it's tough to stay interested as I'm expecting at some point a dramatic reveal from out of nowhere, making any previous speculation sort of pointless.
