seriously though, this is what i put in my chili:


1lb ground beef (90/10)
1 medium onion, chopped
1 can stewed tomatoes
1 can hot rotel (it's not really very hot at all)
~1.5 cups okra
1 can dark red kidney beans
about 3/4 a small can of tomato paste to thicken it
1 can tomato puree
3 minced jalapenos plus seeds (not recommended since davide does not want the spice to flow)
onion powder, i don't know how much. some.
4 cloves garlic, pressed
several tbsp. chili powder
some cumin, just sprinkle until it tastes good. more than a dash but not more than a couple of tsp.
oregano, at least 1tbsp.
parsley, same amount as oregano.
pinch of black pepper
pinch of red pepper
couple of pinches sea salt

cook the meat, spices and onions together, do not drain. add okra and tomato products when the meat is thoroughly browned. let the okra cook for a little bit, keep the heat just under a boil. add the kidney beans last. continue to cook until all bits are the desired tenderness. okra is essential, yes you can use the frozen kind but thaw it first. add corn if desired; i recommend white shoepeg corn. sprinkle cheddar and/or corn chips on top as desired.

you can use fresh tomatoes if you want, but peeling and boiling yourself is really a pretty big hassle unless there's a particular type of tomato you swear by.
