Life was the first show that came to mind but I really like how they ended it. I don't feel left hanging.
FYI, the BBC version of Life on Mars was meant to be just two series long. They ended it when they wanted to end it. There is a sequel to the series called Ashes to Ashes which is currently in Series 2 of 3. I hope they show it on BBC America soon.
One show that was a guilty pleasure of mine was 3 South on MTV. It was an animated show about dumb college students. I might have been the only one to watch it.

Don't know if it's been mentioned yet, but I loved Spaced. I was incredibly disappointed it only got a 14show run before it was over. (To be fair I'm not for certain this series was officially cancelled, but I know there was a third season that hasn't been made and is on the rocks on when and if it's going to get done.)

Justice was a lawyer pilot season that iirc didn't even finish out the initial episodes but I thought the characters were cute.
Witchblade would probably be terrible if I watched it again today but I remember being hugely disappointed when it was canceled.
There was a tv show that didn't even last its entire first episode being aired. Something like Australia's naughtiest videos. Supposedly, it was cancelled after the first commercial break and they aired something else instead citing technical difficulties.
America's Dumbest Criminals was a few good laughs, too even if it was short
