+1 to Chevelle. One of my all-time favorite bands. Amazing live. Some of the newer stuff isn't as great as the older stuff, but it's still pretty damn good. The older stuff is really just untouchable.

If you listen to the symphonic stuff you can try listening to X japan Galneryus or Versailles.

Galneryus does most of there stuff in English and they're similiar to stratovarius.
And X japan and versailles are just awesome symphonicness even though they sing in japanese.

Godspeed You! Black Emperor, Mogwai, Sigur Ros

GYBE and Mogwai are pretty much the only essentials as far as postrock is concerned, a lot of folks would say the same of Sigur Ros but I guess they just never quite hooked me. I enjoy a few others to be sure, but after the first two you mentioned, it's all downhill from there.

Mogwai is a band you really, really need to see in person though. Takes on a whole new dimension in a live setting, and it's not to say their studio efforts are necessarily lacking, but given the importance of dynamics in their music, household audio equipment just can't fully deliver the whole experience. Mogwai Fear Satan, for example, has enough force behind it on stage to just about knock you flat on your ass.

Sirenia up to the album At Sixes and Sevens is similar to Lacuna Coil, I didn't like them after that because they removed most of the vocals except the main female

If you like Circa Survive or if you thought it was a bit too weird but almost good you will like Saosin, the lead singer was the same for a while then they replaced him with a guy that sounds just a hair less feminine

I would call Sabaton and Mercenary epic but all of their songs pretty much sound alike in the vein of the already mentioned Sonata Arctica

In Flames and Disarmonia Mundi you might selected songs from, I would recommend Come Clarity and Fragments of D-Generation as starter points; In Flames actually gets more generic as their albums progress so go backwards if you dare!

And I will throw Pure Reason Revolution out there even though it doesn't fit what you listed, everyone should like them

Disregard everything that In Flames recorded after Colony, which I guess was kind of their Black Album. Clayman, Come Clarity, etc., all uniformly garbage, unless you're into half-assed Jon Davis impressions.

The good news is, the older stuff is pretty decent! They peaked pretty early for sure, but managed to churn out a decent volume of listenable material up 'til/maybe including Colony. Really though, if you want HQ melodic metal music, IF is second-tier compared to folks like Carcass post-Symphonies, or At the Gates' first couple releases (Before Terminal Spirit Disease).

Necroticism, Heartwork, The Red in the Sky is Ours, With Fear I Kiss the Burning Darkness... unparalleled albums in that particular niche.

Depends on what you like out of the music I guess. I tend to like the "midddle" In Flames stuff, Whoracle to Reroute to Remain or so. Newer stuff is still alright. But then, I'm not as much a fan of screaming/growling vocals. Alternated with clean vocals they can be tolerable, but bands that only use 'em I won't usually listen to.

In Flames puts out good music consistently. My favorite songs of theirs span the entirety of their work.
