Well-done can result in that stale prolonged chewing as well, but yeah I absolutely hate it as well, it's almost like stringy sand paper chock full of saliva.

If you're smart about how you cook it well-done(read: indirect heat increased, direct heat lowered for searing slower) that doesn't happen as often, but a little bit of pink isn't bad to counteract it. If you're seeing red still or your steak is leaking 100% blood and not moisture when you cut it, you fucked up.
