I have to wonder what percentage of rogues would rather use Combat vs. Mut or Sub for dailies at 80 tbh. 20/80?

At 80 it would probably lean towards daggers, because good daggers at 80 are a dime a dozen these days.
The modifier "even" implies that it's shit otherwise, and still shit at 80.

can go with a lot of different setups, I really like the stealth stuff for combat, because you can stealth to where you're going, pop out and just own everything that aggros when you get there
combat kicks mutilation's ass on trash and while leveling (since that's basically trash as well). <_< if it doesn't, you're doing something wrong.

This way I don't have to respec every time I get a new weapon that isn't the same type as what I used previously, and gain some semi-useful things for getting around/away.
I have dual spec pve combat and mut raiding builds and from my experience mut really isn't that much faster for doing my dailies grind. Now I pretty much run up and faceroll things on both specs, and doing it as mut saves maybe a second or two off each mob, if even that. I will say that I save a huge chunk of time doing the first ebon blade daily in IC as combat (15 ebon blade banners), because I can just fly over to the circular arena area where there's groups of 2 vykrul each, pull the entire ring with evasion, sprint, pop AR and FOK like crazy and finish the entire quest in 30 seconds.
how do Rogues fare against Elites or doing group quests?
I never really levelled one so I was wondering will it be better or worst than when I was levelling my pally?
They don't have much survivability so if it's an endurance fight you're probably SOL - if you can blow all your cooldowns and dps burn the mob(s) in time then it works fine
You're not completely sol on the hard stuff, provided they're slowable you can dot kite fairly effectively.
CD's will easily take care of most group quest mobs, at least as combat.
Also, don't forget the vast majority of elite quest mobs are not elite anymore.
Dinged 80 not long ago. As for elites, it kind of depends, a 76 elite undead mage for some quest I could take to 5-10% before the spell damage would get me, ~13k hp at the time. With my newer items and stronger daggers I could probably take him down. Main problem was his immunity to my stun/stops.
Same gear I attempted to kill the mage with, I used to take down a level 81 elite giant for some group quest in Icecrown that required I kill 5 of them.
Both fights were close and I burned all my trinkets/timers and used 1 runic potion per fight.
Basically, I'm saying, it depends on the elite. Usually mages are a joke for me but with no ability to stop those spells and cloak of shadows only able to absorb 1 of them it got ugly.

Yeah, casters that are immune to kick/deadly throw will own you in the face, no kiting there ><
if by those mobs you mean the frenzyheart/oracles elite and the pustulent colossus in icecrown, colossi are easy peasy, hit weak, and can be snared, slowed and interrupted whereas the mage dude is a total dick and it took me 3 goes to solo him at 78 even with frost ward, ice barrier and water ele etc. he has more health, does more damage and you have those adds so yeah totally different depending on the mob D:
i did duo a bunch of group (2-5, rider of blood, the cauldron thingy, etc) quests in icecrown with a rogue on my mage for loremaster of northrend, it's pretty strong but when your cooldowns are gone you are kinda fucked if you can't kite. :<
