    Cooking

I like to cook and I see myself searching youtube for yummy stuff to make.

I made this today,YouTube - How to make Thai spicy chicken wing, It did not look as good as the video, they came out a bit darker but that might be due to the extra sauce I put in mine. They tasted superb.

Anyone got something good to share, maybe a nice simple recipe?

Tip: Instead of coating those pieces of chicken one by one, just put them into a freezer bag with the corn starch, seal it, and give it a good shake. Much quicker that way.

Thefoodnetwork.com When my roommate told me about it I thought it was kind of cool but then when I was bored one day I started looking stuff up. Their food creation section is now the bane of my existance.

    Mexican Casserole

    Ingredients

Flour Tortillas(usually need about 8 or 9 of them.)
Canned cooked chicken or ground beef(whichever you prefer)
    1 can Green Chilies
1 can of Queso sauce(if you like it, if not you can skip it.)
Cheese, lots of cheese(mexican four cheese, colby jack, cheddar, whatever)
    1 can of precut mushrooms
    1 can mexican rice
    1 can refried beans
    1 can enchilada sauce

You can make this as hot or mild as you want. That's the good thing about this recipe. If you're using the queso sauce just get hot if you want it hotter etc. I usually use ground beef for this so I will explain how I make it using that. If you decide to use precooked chicken just swap it in place of the ground beef but don't leave it in the frying pan as long.

Simmer the Mexican Rice until it starts boiling. At that point mix in the can of refried beans. Stir it up so it looks like a saucy paste. Let it simmer for a while so you can work on the next steps.

Throw the ground beef into a frying pan and begin cooking it. When it starts getting brown all over, mix in the green chilies and the queso sauce. Spray the bottom of a casserole dish with PAM. A LOT OF IT. Otherwise the tortilla shells will stick. Lay down two whole shells on the bottom. Tear another one in half so that the straight edges are in line with edges of the pan. This prevents the sauce and everything from cooking over onto the dish itself.

Take the Rice/Beans mixture and spread it out over the first layer of the tortilla shells. Sprinkle a good amount of shredded cheese on top. Then apply another layer of shells.

The second layer of shells you will cover with the queso, chicken/beef, mushrooms, and chilies mix. Add another hefty helping of cheese on top of it. Add the the third and final layer of tortilla shells on top of that.

On the third layer, cover the top with the enchilada sauce and some more cheese. Can you tell we love cheese?

Make sure you pre-heat the over at 425 degrees. Cover it in foil and cook it for about 15-20 minutes depending on how crisp you like your tortilla shells. Remove and cut and serve like lasagna. And enjoy Brill Weave's Mexican Thing!
