I'm confused

Okay, so I was thinking of starting to gather up some Guild Points for key items I may want to get, and I have no idea how the Guild Item Pattern thingies out there work. I did search around, and if it's staring me in the face feel free to flame me.

Now, looking here:

As an example, I just hit 50 Alchemy.
That would make me an Apprentice (if memory serves).

Would that mean I need to pass in Flame Claymores today?

Yes, click on the item itself, and it will tell you how many NQ you can hand in to cap GP etc.
You will only be apprentice if you havent handed in your rank evaluation item at 48-50 yet though, otherwise you will be a journeyman.

Okay, now what about for say tommorrow, it says Amateur but there is no item listed as Amateur in the chart below.

You have to wait until the item is actually requested by the contract manager before it will be listed. You can be guaranteed, however, that the item you will have to make will be from the Amateur rank.

The above holds true as long as you do not advance into the next rank.

Oh okay, so all those things have to be reported first.
That's making a little more sense now. I was hoping to go ahead and kind of pre-prep for points, but I suppose that makes it a little too easy.

Once you do the patterns long enough, you can sometimes make decent predictions.

As an alchemist, I can almost guarantee that the veteran rank will be a ridiculous stat potion that requires mugwort. Stupid potions. I don't think I've EVER seen anything else requested for that rank.
