It's the xp loss that inreases the grinding, not downleveling. I make a distinction between both, because like I said, this loss should not make you lose a level if you're playing the game they wanted you to play. The only reason why "losing a level" exist at 75 is make sure people eventually "pay up" for their cumulated death.
The game you're describing is WoW. It barely penalize you for death, and I agree it's better this way. People still rage quit all the time, but giving stupid players less oportunies to be stupid is always good thing (don't think for a second it stops retardation though, they will always manage to fuck up your day somehow).

As for the system being stupid, the amount of "stupid waste of time" in FFXI are common. In fact, if you removed them, the game would probably vanish. I don't understand why you would target grinding buffer more than..idk, farming something shitty drop rate, or not having "warp" easily avaible.
