I think most of the ones I can think of were already listed, but I can't really remember due to the same reason Null listed: I haven't played mine in ages even though I still get games for it.

I would really recommend the recent Metroid Prime Trilogy if you haven't already got all the games. For the same price as buying Prime 3 new you can get the entire series. Other notables:
Super Mario Galaxy: Easily the best platformer this generation. My favorite game this generation. Just great.
New Play Control! Donkey Kong Jungle Beat: Great high-score based platformer from the developers that later brought us Galaxy. No bongos needed this time. You'll be beating the crap out of gorillas like the motherfucking fist of the north star.
Punch Out!!: People who say this is just a remake haven't played much into the game. After clearing contender mode, all the boxers come back with new movesets and new defenses. You too can lose your championship title to Glass Joe. I nearly did.
Little King's Story: It's a Pikmin-esque arrpeegee-thingy. Doesn't really have a genre. Take your townpeople, give them jobs, conquer the world. Tons of content in this game, and some wacky boss fights. This is the #1 "great game no one is playing" for the Wii.
Fire Emblem: Radiant Dawn: Typical Fire Emblem. Try Hard mode if you want to cry yourself to sleep every night.
BlastWorks: It's Little Big Planet for shmups.
Zach & Wiki: If you can get past the animu exterior, this is a great point and click adventure game.
WiiWare:
LostWinds: A Metroid-esque puzzle platformer. One of the first games on WW still holds up today.
NyxQuest: Another puzzle platformer, but this time it has somewhat linear levels to it. Some puzzles are less "how do I get up there," but rather "how do I do those things I need to get over there without being crushed eight different ways."
Swords & Soldiers: A 2D RTS. Play as the Vikings, the Chinese, or the Aztecs. Pretty much a standard RTS minus actually directing your troops. Through in a "skill tree," resource management, and different spells and strategies from each faction and you have a solid game. I think multiplayer is local only, thought.
Overturn: Same sort of game as Custom Robo or Virtual On. Online multiplayer to boot. Pretty solid for just 8 bucks.
Bit.Trip Series: Crazy rhythm games. Haven't tried either of them myself, but I hear nothing but good things.
I really enjoy Elebits, it's cute and really fun to find all the little elebits, by throwing shit around a room and snagging their running asses. It takes good reflexes and a decent amount of brainwork to do well in the game, which makes it enjoyable. It kind of reminds me of Katamari in that the only point of the game is to gather as much of something as possible in a short amount of time.
Okami has been mentioned a few times, it's just a visually pleasing game, not to mention how awesome the actual story/gameplay is. The humor is pretty good, too, I laughed quite a bit. It's along the same lines as Zelda of course, an adventure game with the same formula, but a totally different style and setting. Speaking of Zelda, Twilight Princess is possibly the best one (some say it ties Ocarina, others say it falls short of Ocarina, but not by a large margin).
One VirtualConsole game I got addicted to, being the SE fangirl I am, is My Life As a King (FFCC). God damn that game, if you get the additional races and dungeon packs, is like crack. Once you get going building a kingdom and sending adventurers off to die-I mean conquer new areas, it's quite addicting. The townsfolk are varied and interesting, building up your shops and meeting goals for your kingdom is fun, and waiting to see whether the adventurers will triumph or fail can be quite suspenseful. I dunno, I just really liked it. My Life as a Dark Lord is also out now, it's supposed to be quite cute and fun too (but maybe not as addicting). It follows the same characters, just from the other side of the plot...
Wii sadly does lack a lot of good games, it's almost all sandbox trash nowadays. Its big draw I think is virtual console, where you can buy and play all the old games you once loved, free of having to blow on them to get them to work >.>

de Blob is definitely worth a buy if you can find it in the $20 dollar range. I saw a review for it on Gametrailers quite a while back and decided it wasn't more than a $20 dollar game, so when I finally found it at that price, I picked it up. It's pretty damned enjoyable especially for a game that few people have heard about.
Problem with Wii games is that if it's any good you're probably familiar with it (Mario Galaxy, Mario Kart Wii, Metroid Prime Trilogy, Twilight Princess, SSBB) and they are mostly first party. Most of the Wii games are crap shovelware. VC is where most of the juice is at. That's why I'm excited when I find a little diamond in the rough like de Blob that's 3rd party and excellent (and not $50 bucks like every 1st party title).
But yeah, probably every Wii owner out there has 5-10 games and their libraries are gonna be 90% the same because that's all that's worth owning.
Got bored and made one of these for Wii as well, considering I've sifted through most of the shovelware that's out for the system already.
This is meant to be for people who own the wii who may be looking for games to play for it, I don't care if you hate the wii but keep it to the System Wars thread, if people could refrain from shitting up this thread it'd really be appreciated.

Arc Rise Fantasia - Horrible voice acting, but otherwise a good RPG with a really interesting magic/weapon system.

A Boy and His Blob - Update of the classic NES game, with nice 2D graphics and plenty of charm. The puzzles are a lot of fun and satisfying, and the blob forms are really cool (Mech blob!)

de Blob - Travel through an open city and paint everything, with mini missions and things to collect. Has a somewhat annoying waggle-to-jump but otherwise it controls pretty well.

Dead Space Extraction - Probably the best lightgun game on wii, and a worthy entry in the Dead Space universe. A great story with excellent pacing and voicework make this a must-play for any fan of the franchise. Coming soon for PS3!

Dawn of Discovery - Real-time strategy/economic sim. Build houses and roads and markets, make sure your citizens have plenty of goods and access to public buildings. Definitely worth playing through story mode, it's extremely addictive

Endless Ocean 2 - Swim around, find treasures, pet fish. Relaxing, fun, and educational. The 2nd game adds a lot more content and things to do, but you can definitely play at your own pace. EO1 is worth playing as well.

FFCC: Crystal Bearers - Don't expect an RPG, a FF game, or a FFCC game- this is an action/adventure set in the FFCC universe. Huge open world with no load screens, 330 in-game achievements, and a deep accessory crafting system. Takes a little while to get used to the controls but it's got loads of stuff to see/do.

Lost in Shadow - Interesting puzzle platformer with rudimentary leveling/swordplay, where you travel around as a shadow. You can manipulate the light/environment to make new paths. Gets a little repetitive with a little too much backtracking, but otherwise really unique.

Little King's Story - Think Pikmin meets RTS. Create your own squad of hunters, knights, lumberjacks, etc. to clear obstacles and conquer neighboring kingdoms. Looks a little kiddy but this can get pretty challenging if you don't know what you're doing.

Monster Hunter Tri - The same addictive hunting/looting gameplay of the PSP versions, now on a console. Classic controller/pro means no clawing. Easy to use online system as well.

Muramasa - Gorgeous 2D sidescrolling action game with RPG elements. Tons of swords and accessories to collect, 3 endings per character, and an unlockable 1HP uber difficulty. Great music as well.

Okami Wii Edition - As good as the PS2 game, basically Clover/Capcom's take on Zelda but set in ancient japan with a woodblock-style aesthetic. If you haven't played this on either system you are basically satan.

Red Steel 2 - The same first-person shooting/swordplay as the first but hugely refined, and now set in a samurai western style cel-shaded world. One of the best (only) uses of Motionplus.

Resident Evil 4 Wii Edition - The definitive version of the game, all of the extra content of the PS2 version but with a much more accurate aiming system via the wii's pointer.

Rune Factory Frontier - All the addictiveness of harvest moon, but with action RPG dungeon crawling to make it even more engrossing. You have to spend too much time managing your Runeys, but you can capture monsters to run your farm for you to free up time in the day for (many) other things to do.

Sin & Punishment 2 - Rail shooting and bullet dodging at its best. Very challenging, be prepared for rage moments even on the easiest difficulty.

Trauma Team - The same semi-realistic trauma center gameplay but now includes 6 medical disciplines that all play differently, and without that ridiculous alien virus bullshit. Great voice work and story.

Another Code R - Sequel to the DS game Trace Memory. Point and click adventure, interesting story. Never released in the US.
Blast Works - Side-scrolling shooter. Destroyed enemies can be stuck onto your ship and fire their weapons as part of yours, eventually you can have a huge mass of death-spewing debris.
Deadly Creatures - Semi-realistic action game where you play as a tarantula and a scorpion. Actually manages to fit in a good story, with voice work from Dennis Hopper and Billy Bob Thorton.
Disaster: Day of Crisis - Disaster action/adventure with RPG elements and lightgun sections. Decently challenging, horrendous voice work, but very fun.
Elebits - If katamari was a first person shooter. Toss shit around and make a complete fucking mess of various rooms to find little creatures, the more you zap the heavier shit you can toss.
Fatal Frame 4 - The same take-pictures-of-ghosts gameplay as the previous games, although one character uses a flashlight instead for more action-oriented gameplay. If you liked the series you'll definitely like it, but newcomers might be turned off by how slow everyone moves. Fan-translated, otherwise not available in the EU/US.
Final Fantasy Fables: Chocobo's Dungeon - S-E's take on a roguelike RPG, with jobs and all. Despite the somewhat kiddy appearance (and really bad voiceovers) this is quite challenging.
House of the Dead Overkill - Lightgun game mixed with grindhouse movie. Some hilarious writing, and great HotD gameplay to boot.
Kororinpa - Simple marble rolling/pit avoiding gameplay. Has various unlockable boards and marbles with different physics.
Fragile Dreams - More of an anime you play, with gorgeous graphics and action RPG gameplay. Some combat/weapon issues but the atmosphere/story is probably why you'll end up playing this.
Madworld - Ultra-violent deathmatch type action game. Kinda hard to see what's going on with everything in black & white.
Munchables - Katamari-ish game where you eat alien vegetable monsters to get bigger, allowing you to explore further and eat bigger monsters. Kinda short but there's 2 extra characters and accessories to unlock.
Resident Evil: Darkside/Umbrella Chronicles - Lightgun game that takes place during the main games in the franchise. Darkside Chronicles seems to have a better story and better graphics.
Silent Hill: Shattered Memories - No combat, and the bloody hell world is replaced with ice and annoying monsters. The waggling when enemies grab you doesn't always work, but the story is one of the best and the exploring between ice world sections is a lot of fun.
Zack & Wiki - Point and click adventure game, with points and items. Definitely unique, despite the kiddy appearance this will definitely appeal to adventure fans.

Not much I can add to Atreides' post, but I will say that if you anticipate wanting to play both Endless Ocean games, get the first one first. (Dive, Discover, Dream) I just got the first one recently after loving the crap out of the second, and it definitely feels like a step back. Still good, though.
And Prince of Persia: The Forgotten Sands might seem like a rushed game to ride the film's publicity, but the game gets so freaking awesome once you get full reign over the creation powers. Plus there's an area I like to call "Super Prince of Persia Galaxy".
Supposedly Aquanaut's Holiday for PS3 is extremely similar to Endless Ocean, only problem is the english verison is out of print and costs about $70-80 for the Hong Kong version on ebay. I've been wanting it for months, but not for that price lol. But yeah I definitely would play Endless Ocean 1 before 2, the only thing from 2 I didn't like more was the stupid Pulsar and Sharks
