    Based on how you're describing her, I don't think you're going to be able to do this without hurting her feelings. But to minimize it, tell her something along the lines of what Kuno said, but in a gentler way. Let her know you appreciate or like the fact that she emails you, but you'd prefer actual emails and not forwarded chain letters.
