What do you want to do with it? I was using 2008 Server for a while, and after having it running for a few months reverted right back to a Linux server. Not really any benefit to wasting the money on 2008, to be honest. HyperV isn't all it's cracked up to be.
Well was going to use it for a Backup/File server but after doing a little research, I ran into FreeNAS which I think will do me much better and would be cheaper and would allow me to do RAID5... But wondering how much I should shell out for the system.
Don't have to waste any money on Server 2008 if you're a student or have a valid .edu address.

Haven't had the pleasure of college for 7 years now, so I don't get the student discounts. Doesn't change what I stated though, in view of MS Servers. No real benefit to using MS Servers unless you just really need Active Directory. Getting webhosting permissions working correctly for example is a nightmare. HyperV is a joke compared to free solutions you can get on Linux platforms (legacy network adapters, really? That's only the start of your woes).
