Grey or Gray depending on where you come from and what context you are using it in. In some circles, grey carries more esteem or sophistication but that is a personal perception kind of thing or -shit is situational- :D.

Earl Grey tea is another use, named after Charles Grey. I usually think of the tea when using that spelling, mainly because my ex used to drink it.
If you are using it in a report or assignment, the appropriate spelling can be based on the content and the current culture's most popular choice of the two.
Also you can be totally fucking random. I've noticed George R R Martin (American) uses "grey" but also "favor" and "mommy". The mixture of British and American English annoys me more than the straight-up use of American English generally, pick one and stick with it, goddamnit.
Never really thought about it, but if the usage of "grey" makes me look like a snobby brit, I guess I'll use that.

I've always used Gray Because of Gray Fox. I fucking rage when people spell Grey Fox.
I put either, because quite frankly I can't remember the last time I actually used that word so dunno what I would writing without thinking...and I can imagine I've probably used both.
