i've also got back into Parasite Eve. Bit short, but sweet; and its fun to shoot crap.
Aside from things already mentioned, all I can really think of is this obscure but awesome SRPG called Ring of Red on PS2 as well as the Disgaea series. lol Never played Thousand Arms or a few others mentioned so it sounds like it's time to break out epsxe once agaaaain.

Fuck Vagus, I was gonna say 7th Saga. One thing you gotta know, the US version was really unbalanced and made it really hard to beat certain parts that were scaled to your character. The version I play on my Emulator is rebalanced to the JP Version. The game however involves a ton of grinding.

Castlevania: Symphony of the Night (PSX) it's an action RPG but the game is incredible.
I owned Beyond the Beyond as well. Awesome game. Difficult at times and had to play through it multiple times for the optional events. I got it cheap one day not knowing what it was. Do not regret it one bit. Steiner was cool too.
My first two RPG's I've ever played. To this day (even though I haven't pulled either out of the storage bin to play in 10 years or so. I still have everything memorized from playing it so many times over as a kid. Almost tempting to hook up the PS2 to my LCD lol.

Suikoden 1 and 2. The rest in the series are good but if nothing else, 1 and 2 for sure.
This^ Question- Anyone get stuck in the medieval world like I did ? There was a glitch in the SNES cartridge that had you perma stuck in between castles if you back tracked when you wern't suppose to. I remember grinding my ass off and getting fucked over by it. There was like no fucking way around it... I had to start over... still RAGING over it.
