Personally, I absolutely hate the taste of roasted turkey- it's either too dry or tastes too much like watery skin. I've overcome this problem by roasting capons(castrated rooster), or finding a giant ass chicken.

This is my favorite roast chicken recipe, and it makes a great meal any time of the year.

    Do this:
    1. Clean the bird- remove and dispose of giblets.
    2. Melt some butter, rub it down, salt + pepper all over; don't be stingy.
    3. Take a head of garlic, slice it in half horizontally, shove it up the butt.
    4. Take some lemons- cut them in half, shove them up the butt.
    5. Slice a few onions thick, put them at the bottom of your roasting pan.
    6. Put the chicken on top of the onions
    7. Roast at 400 F. for about... 90min or until the juices run clear.
    8. Take the bird out and let it rest in the pan for a few min, meanwhile, chop up a baguette or a fairly large hunk of sourdough into inch size cubes- saute in oil/butter to make croutons. When they're all toasty and awesome, put them on your serving platter.
    9. Dump the onionchickenjuiceorgy on top of the croutons, and slice the bird over them.
    10. Throw out the stuff that was in the chicken's pooper- it doesn't taste any good.

This is the best bird recipe I've found, and I highly recommend it. For sides, I would say sauteed spinach w/garlic, bacon-onion green beans(will post later if wanted), or roasted asparagus would be a good balance.

Maple and brown sugar glazed ham is probably the most delicious thing I've ever had at Thanksgiving. If you're going with ham this is the way to go.

I'm preparing the meat for my family's Thanksgiving this year. I've chosen to go mostly with venison and goose. I'll prepare a small ham for people that shudder at the thought of eating dark meat or are scared of finding a BB. We also have someone that brings pasta or a hot dish. Thanksgiving is probably the largest gathering my family has during the year, due to other obligations for Christmas.

I think I'm going to roast most of it, but may prepare the venison two or three different ways.

My husband makes a killer Cornish Hen... you can get them typically in a pack of two. So it ends up being like a mini-turkey for both people... and they are very, very delicious. Make them with some of the other yummy things that people have suggested and you'll have a lovely Thanksgiving :D

My family does prime rib for Thanksgiving. Also typical dishes like stuffing, green-bean casserole, yams, etc.

Yes to this. Cornish game hen is marvelous without having an ENTIRE turkey.

Buttermilk Muffins are great, and simple to make. That said, I can't seem to find a recipe for something that isn't combining their simple goodness with some bastard fruit or grain. Also, none of the pictures look as delicious as I know they can be. Also, depending how large your family is, it can be challenging to use up a full carton of buttermilk. I like buttermilk muffins and buttermilk pancakes and I still hesitate to buy a carton of it for just my girlfriend and I.

List of repeat-occurrences at my thanksgiving table:
Turkey with stuffing, Cranberry sauce (there are multiple kinds to make if you feel adventurous), Butternut squash, Mashed potatoes, corn bread (FOR THE LOVE OF GOD DON'T PUT CANNED CORN IN IT. MEAL ONRY!), buttermilk muffins, corn, green beans. Err.. turkey is easily the hardest thing to make. Butternut Squash is so simple to make that you don't really even need to think about preparing it. Muffins require something of a touch, as you don't want to over- or under- mix their batter. Corn bread is about as simple as it gets, and nice crispy green beans can be made in under 10 minutes. Corn is pretty simple too, just husk it and toss it in boiling water for a bit. Going to want to buy the corn pretty close to the holiday though. I'm sure you knew most of that, but I enjoy talking about cooking so I'm writing it anyway.

I think my mom made a pretty good Pumpkin roll one year, but I also recall it was quite a bit of work and she hasn't made it since.

green bean casserole is a must, i know it's already been said but seconding it
deviled eggs with cumin sprinkled on them as well (already stated i know)

man, can't wait til TG now... too bad i'm too broke to do black friday again

edit: also a dish with Squash as the primary ingredient, can season it with some salt/cinnamon/etc, squash can be made to be very delicious based on how you season it, and what other vegetables you include with it, red peppers, green beans go well with it

Homemade Cranberry Bread... my mom makes the most delicious bread ever. She made some early this year, I think I had like 2 loaves to myself in a few days.

Thanks for all the suggestions! I think we shall go with a ham, with sweet potatoes, beets, and turnips. I think I'll also include some cornbread, because that sounds really good. I really love devilled eggs, but they're really hard to make and the Cornish hen sounds divine but I think that is beyond me.
