I picked up these books in Japan so they are all in Japanese. Most are really accessible with minimal knowledge of Japanese.

The world concept book is a really nice concept sketch book that comes with a DVD showing some JP LS fighting all the sky gods and Kirin. Came out a little after CoP's release.

FFXI Maniax Hunter's Bible is fantastic. It's a series of maps for every zone that shows every type of mob in the zone and their locations and roaming paths. Full charts showing all kinds of information. Based on ver.20060221 of FFXI.

Final Fantasy XI Fashion 2005 is a picture book showing all of the races in the game wearing all of the gear that was available up until CoP.

and finally

Dengeki PlayStation Final Fantasy XI Vana'diel World Guide based on Wings of the Goddess. This is based on ver.20080501. This is essentially Dengeki's review of WotG soon after its release and the first bit of Campaign was implemented. It has two 4koma comics on every page.
