Have you ever had any Crémant? Depends on your taste, but Crémant are also sparkling wines, and some can have extremely refined tastes. They tend to be a bit cheaper than marquee Champagne as well. I know a really fantastic Crémant de Bourgogne that is well worth the cost and could convert you. Also, if you don't like champagne, have you ever had any good Cavas?
Honestly, wine is a huge world of taste. If they are big into wine, and you don't know what they prefer (taste-wise), it's probably best to skip the wine, unless you have somewhere to start...
It's not like you can magically pick the best bottle, there are specific tastes that some people really enjoy, while others may enjoy something completely different.
If you want to get a decent bottle of wine for someone whose taste you do not know, stay away from extremely strong flavours, go for Bourgogne or Alsace or something refined but safe. I can recommend some, but I'm not sure how easy/hard they are to get outside of Europe.
Hey Wop, seeing as 1980 is a bad vintage year for wine (well for French wines, it seems), have you thought about other types? Ports? Tokaji? etc?
