Gonna go with this. For the scallops in question however, chewy is clearly the way to go.

Crispy but not burnt is best. Floppy... ugh. The texture of un-rendered pork fat is disgusting. If it's cooked properly all the flavor will be in the meaty bits, anyway. I love rare beef but undercooked pig is gross.
