This is very similar to what he makes but instead of pancetta it's bacon, and the picture on this page looks almost exactly like it.

Perfect bacon is where it's just a hair away from burnt, and it's crispy and just melts in your mouth. Mmm.
I've never had bacon that is crispy yet not burnt, many people have tried for me, but never succeed.

Crispy but not burnt is best. Floppy... ugh. The texture of un-rendered pork fat is disgusting. If it's cooked properly all the flavor will be in the meaty bits, anyway. I love rare beef but undercooked pig is gross.
