I'm planning to get a Nexus One soon. My old phone is a piece of crap flip phone that seriously needs to get replaced. All I need to do is just put my sim card in the nexus one phone and everything will transfer automatically?

Also, would it increase my bill if I have a regular flip phone and will use the Nexus One? Is the internet free by connecting to a wifi network?

Most phone carries force you to get a 35 or 45 dollar data plan to go with a phone that is specifically designed for web browsing. So expect an increase to your bill +40 easily.

Only if your phone has all your data saved to SIM.

More often than not, your contacts WILL NOT be saved on SIM, but some phones will have an option to copy them over, then new phone would need an option to read them off.

But your phone number should transfer automatically when you put the SIM in the new phone.
