The three NFC teams to win titles between 2000 and 2009: Rams (sucked by the time Warner left and are now a joke), Bucs (have been a joke since their title, which they won by beating the RAIDERS), and Giants (D-line fell apart, RBs lost some of their edge, secondary is a mess, and they won that title with the flukiest catch in SB history). Saints haven't proven themselves as being a dynasty team either.

Eagles had four straight division titles/five NFC Championship games, lost by 3 points to a dynasty team in the Super Bowl, had one of the strongest defenses for the entire 10-year span, with a franchise quarterback who still put up great numbers despite having the likes of James Thrash and Todd Pinkston as receivers and a tiny workhorse RB. I think Football Prospectus even rated the Eagles as having a strong defense in 2009, even though our D-coord. died and we lost our franchise safety. Football teams want to win titles, sure, but having consistency for an extended period of time is something that every single person involved in the NFL, including the fans, covets.

Of course the saints are gonna be a Dynasty. They don't call him Breesus for nothin.
