You can't make just the edges chewy. Bacon with chewy edges is just chewy bacon.

Also wrong since in the first topic I mentioned that I love the crispy/chewy hybrid best with chewy at the end. You need to cook it on relatively high heat for a shorter amount of time. The middle shrinks up and gets crispy well before the ends do. Alternatively you can cook it with the end kind of hugging the cupped end of the pan and less heat reaches the ends as you cook it, maintaining its chewiness as the middle cooks.
