    Seasoned roast pork shoulder. My favorite meal alongside yellow rice with beans. It's heavenly and the skin is a fucking amazing thing in and of itself.

    Is it really tender? My main thing with pork is that unless smoked it tends to be dryer and a bit tougher than beef.

    As long as you get it as soon as it's cooked. The skin is thick but chewy and separates from the actual meat easily. The meat is tender and moreso comes off as if it's pulled or shredded than it being whole.

    When it gets cold/reheated it's better in a stew. The skin is fine out of the microwave though.

    It's so immensely flavorful to boot. One of my pastor' wife (who is now dead ) used to make her turkey taste like pernil. Thanksgiving was always amazing.
