Not that you needed validation, but the latest Famitsu puts the early .dats for DoH and DoL right on the money.
Any guesses as to if they add any of the DoM/DoW jobs to the fold?
Hard to say. Given that they clearly have plans for classes like Musketeer and Arcanist both in the .dats as well as in guilds, I would expect them to be introduced by the first expansion at the latest, but potentially in an update or even by release. And even though we know what's in the .dats, we don't know what guilds are featured prominently in the other towns yet. Those would give a good indication of how much planning has been put into the new jobs.
It's hard to say at this point if we're looking at regular new classes that we could see at release, or advance-type classes. My guess would be advance, in which case it's tough to guess.

There better be more than 7 DoW/DoM classes by launch. That's an awfully small amount, especially considering there are only 2 DoM.
FFXI when released in Japan had more than that, right? I know Zilart wasn't out yet but there were still 11 or 12, right?
Already some indication that Arcanist will be an advanced-type job. I would imagine that there will be a few advance-types at retail, or at least very shortly after.
I mean, there's already a spot for Assassin, Fencer, Enforcer, Musketeer, Samurai, Flayer, Stavesman, Sentinel, Bard, Aracanist, and Mystic in the .dats.

I understand they're in the dats, I certainly don't doubt they will at some point show up in the game. But I'm gonna get bored of playing/seeing the same two mage jobs for a couple months until they decide to add the rest. I am hoping about 4 or 5 of those classes in the dats end up as advance classes at launch.
The names sound very interesting, especially Fencer, Enforcer, Musketeer, Mystic, and Arcanist. I was looking at the games some of these classes originate from, and while that hasn't really proven to be a good way to gauge what the class will be like, it's still fun to research.
With only 2.5 months to go, I don't see them adding more classes at this point. They are working a lot on balance and other refinements right now, it seems like a poor decision to add more classes.

We actually have more classes even if you get rid of the disciple of the land and hand then FFXI had at launch. The advance classes didn't come at launch, it was only the main 6. The current classes are probably all we will get to start and we will get the others as advanced classes to unlock the ability to use the weapons in a quest sometime later I'm guessing.

You can actually level up or you're just earning "points" to skill up categories ?
Oh and, since i'm completely lost with all these classes, i was a Dark Knight and Ninja in FFXI, and after 5 years, i kinda started to like playing as Black Mage.
What would be the right classes in FFXIV ? Like, which one suits DRK,NIN & BLM ?

There are physical level (of your character) and class levels (of each class) class levels seem to give you skills and pysical level gives you attributes.
You can play as a DD who slings magic spells if you want, just select magic skills on your DD and walla dark knight. Cant do ninja because no shadows (as of yet) BLM/WHM is a conjuror. FF14 is explicitly avoiding remaking the old jobs and instead presenting a refreshing selection of jobs and allowing you to select any skills from jobs lvled.
There's one possible technicality: The effectiveness of magic seems to be based heavily the magic attack power granted by your weapon, and so far only the magic-users' weapons grant this ability. You can give your physical damage dealer some spells, but they'd do next to nothing without a magic-granting weapon.
I'd also like to add that marauder is possibly similar to drk but without the spells.
And what class is the Melee one?
