Despite a number of people saying that its easy to do things like display your name differently no one has been able to fill me in on how to do it.

There are at least 2 people who have videos to post if someone wants to bother to PM me about it.

Not a lot is said because people think it is trivial.

Open up your favorite memory editor, select the process that is FF14alpha (i dont know the process name)

Search for text strings that are your avatar's name.
Modify the text strings to a dummy name of equal characters.

Start your video capturing software such as fraps.

Enjoy video captures that are relatively safe to make.

Even using this technique, streaming is a bad idea because there is only one server. Hunting you down would be as simple as looking at your screen and finding an avatar on the single server doing what your doing in the place your doing it.

most common used that are free:

cheat engine - http://www.cheatengine.org/download.php
artmoney - http://www.artmoney.ru/e_download.htm

they are programs that you can run on your computer that monitor the memory reserved for other applications and allow you to change that memory for your own purposes (usually malicious)

I am still skeptical about that though otherwise SE will have a shitstorm on their hands from all the people that bought FF13 for the Beta code for 14. I also can't see them passing on a PS3 Beta because there is a lot that could go wrong on the PS3 considering it is a different architecture and they can't ignore that.

There will be a PS3 Beta. This is the company that beta tested FFXI for PS2 release in the NA when there already was a PC release and PS2 release already in Japan. This is the company that beta tested for the Xbox360 when the game had been out already for almost 4 years on PC and PS2 (With limited success on making the port decent I might add XD). The idea that they won't beta test for the PS3 in a world release and less tested game and has the incentive from the beta codes in FFXIII just flat out doesn't make sense.

I'm NA and I just got a beta invitation 22 minutes ago, 3:00am EST on the dot.
