You get trinket as JC, trinket, free flask and extended effect on potions AND mount as alchemist, More sockets as BS, googles, cogs, mount as engineer, LW gets no love as Enchanting in that aspect tho. and ench comes ahead with the lolpet.
So yes its overall crappier than other professions, thought my bad I was not speaking purely about the buff it gives you.
Alchemy mount is BoE, Alchemy trinket (at least the INT one) is pretty terrible compared to most trinkets of that level. You gain nothing on potions from Mixology, it's only flasks and considering you don't flask for non-raids...
I have Enchanting, Engineering, Alchemy, and Jewelcrafting. The one I would most likely drop is Alchemy and the one I would least likely drop is Enchanting because of the huge amount of money you make for nothing for it and having the same benefit as other professions of +80 INT.

Imagine a boss like Cho'gall where you aren't always tanking him. You could switch to Unholy Presence (faster rune CDs than Frost Presence) and build up a huge Blood Shield stack, say 6 Death Strikes before you have to taunt. You are now looking at a Blood Shield of around 100% of your max health (for the sake of simplicty I am assuming a 15% effective DS due to the presence switch). This is broken.
Ohhh I love that stacking feature. Will probably be nerfed really quick or has some sort of cap on it by the time it gets let out, say, stacks up to 50% of your max HP (seems reasonable), I can already hear many people whining.
However, though the healing was reduced, the stacking feature seems to make up for it, and for that I'm feeling more pleased about it than usual.

Alchemy is kind of lackluster. The mount SHOULD only be for Alchemists and much cheaper but fucking Blizzard loves to cater to people whining all the time. The "free flask" isn't that amazing also (80 AGI compared to 300) It is quite nifty for arenas/bgs though. The JC trinket is only 346 and it will get replaced very quickly. LW makes quite a bit of money on my server also since there are so few and they use a lot of Chaos Orbs.
The first thought I had reading of the stacking blood shield was "soloing old HCs" actually.
In a scenario where a low level elite can't fully consume your shield, the continuous stacking would act as the perfect defense against occasional abilities or imba spells.
For Alchemy, Flask of Enhancement provides the +80 perk that all other profs aim at providing. The flask/elixir duration buff saves the alchemist 100-150g per hour spent raiding, assuming he raids in 2 hour blocks. The new trinkets they are bringing out will pretty much be used by all alchemists until i372 trinkets are easily acquired.
Alchemists also can effectively use ultra-cheap mysterious potions which act as both a mana and a health potion.
Enchanting, meanwhile, allows you to disenchant your own BoP gear when you replace it, as well as any BoP quest rewards you get while leveling. These days all the enchants themselves are sold on vellum at very low markup, and BoEs can be sent to a friend or sold for the purpose of disenchanting.
It is entirely possible the blood shield will work with a similar mechanic to vengeance. And the shield will lose some of its power over time (when the earlier stack would've lost its buff). This is how I expect it to work, actually.
Don't think you understand quite how death strike is used, or how harsh the 25>15 nerf is.
The only change it would have to normal tanking scenarios is that exactly, you won't lose a 'good' blood shield if you get a lucky string of avoidances right after heavy damage scenarios where you got a big death strike heal
