Gazpacho is not gazpacho in its individual parts, and neither are most soups.

Cereal remains cereal regardless of what you pour over it, if anything.

Sauce is the correct answer, in culinary terms.

As to "then what do you call the milk left over", it's still sauce, brown gravy doesn't suddenly become not brown gravy just because you ate all your mashed potatoes.

I guess if you are referring to a bowl of cereal as a complete thing then I would consider it a gazpacho. If you are asking what to call the milk by itself then it is an ingredient or a sauce so I guess I agree with your sauce assessment.

Cereal is both a component of the dish and the complete dish.

Milk is only to be considered a sauce if when mixed with the cereal it turns a color or into chocolate milk. It is a beverage when you are complete in your devouring of the actual cereal - read, not including milk - and you drink the milk from the bowl.

It is never a broth, wtf

wut? The food you pour sauce over has no bearing on the sauce itself

In cooking, a sauce is liquid or sometimes semi-solid food served on or used in preparing other foods. Sauces are not normally consumed by themselves; they add flavor, moisture, and visual appeal to another dish.

    Sounds right to me

Sauces are not unaltered single-ingredient items.

    It is still a beverage.
