I don't think there's any good tutorials for 0.31.03/04. I play 0.31.03 because there's no tilesets for 0.31.04 yet and there's also some nasty crashing bugs in .04,
Honestly, I wouldn't follow a tutorial, you'll learn slower than just fucking around. The game's very indepth and a tutorial doesn't really scrape the surface of all the different ways to play. It will teach you the basics but you can learn those pretty easily by just failing while playing normally. The motto of the game is "losing is fun" so you may as well have fun instead of following boring tutorials.
Just search the wiki when you need to find something out and search the tutorial as a reference.

When building a staircase on flat ground with earth above, you must designate a down square on the level above and construct a down staircase on the level below. In the cases where a miner is trapped (and have I ever had some miners trapped in some bad situations), you should give the miner the mason labour and construct a staircase from some nearby rock, he'll build it then dig the down staircase.

I think I might've figured out how to make people do stuff other than what they originally want to do though. I think I finally got a jewelcrafter to mine but I'm not 100% sure.

Military is much more complex than this and I'm still learning the many nuances of the current military interface but it's very powerful. This is just the basics of how to get some people to attack something, though.

Yeah, all fortresses that aren't boringly conservative will probably eventually get fucked up by something. Often failure comes in the form of some crazy ass monsters or some not so crazy ass monsters. Early goblin sieges can be buttfucks. Some titans and forgotten beasts are unkillable under current mechanics so you need to find some way to seal them up. Some forgotten beasts are unstoppable wrecking machines. Doing certain things can release randomly generated demons which are killing machines.
If you don't get killed by monsters, there's a bunch of different ways you can lose a fortress. Sometimes not having plant cloth is enough to grind your fortress to a halt.
Generally there's no treasure for killing stuff (one sort of exception is some circumstances that give you an adamantine longsword) although you can make equipment using the remains of forgotten beasts and what not. This stuff is usually decently high quality.
And yeah, when your shit gets wrecked you need to either rebuild or enter reclaim mode to try to retake the fortress.
I once just about lost a fortress because we had no plant cloth and someone went insane because he wanted to make an artifact using it but couldn't and then his family went insane after he died. It just about sparked a terrible death spiral.
