The only convenient subway in this town (just moved) is already doing it. It's such a small thing but it makes me happy.

I don't quite understand the "new procedure" because that's the way I've always seen it done.
Even back in the day when they did that whole cut the top of like a hotdog bun type shit for the bread.

Best way I can say is instead of slicing it from the side, they used to almost cut the top in a "v" fashion and then put it back on top after putting all the meat/toppings in.

Specifically, back in the day they used to cut a wedge out of the top of the bun. Sliding the knife in parallel to the length of the bun at about a 30 degree angle from straight up and down. They'd then cut down the length, turning 180 degrees at the end and going back down the other side. Then, they'd tear out the wedge from the top of the bun, leaving you with a bread boat of sorts to fill with goodies.
