I guess I made the IRC channels too soon - SE's removed the names from the servers and plans to announce them again later, so no idea if they'll stay the same.

That is not the official FFXIV status page, that is just 2 dudes running a site. No one knows what the name of the servers will be when open beta begins. There were 10 in closed beta. I see 18 game servers right now (5 of which I believe are internal test servers). Until open beta starts, the number and name of the servers will be a total guess.

We already know the answer if you have the ability to read on the beta entry page:

"As long as the World you choose in the commercial release is the same as the World you choose in the open beta test, you will be able to transfer your character name. If you choose a different World for the commercial release, your character name will not be transferrable. For details, please refer to the beta test site."

what are the server names then, chief? oh right. you don't know them either.

Protip: it's already been pointed out that the names in the beta up to now are the same names SE used for XI's *real* beta in JPN, not the glorified demo that NA got, so those are out.

Correct, it's not a question of how many there will be or if you'll be on the same one you beta'd on. It's a question of what the fuck they are going to be named.

From FF XIV News:

UPDATE 3: We’re seeing that it looks like the address of the game servers have changed. This probably means the names of all the servers have changed as well.
